Keto Cookie Dough Truffles
{THM:S, Low Carb, Ketogenic, Sugar-Free}
There is never a bad time to eat cookie dough.
Never.
Ever.
Especially during the first few days of Keto, when you're battling wicked Keto Flu, you know what's nice?
Opening up the fridge to find perfectly compliant, high-fat Keto chocolate chip cookie dough.
It should be, like a rule of starting Keto.
I kid, but I wanted a bit neater way to eat cookie dough, say, in the form of a truffle.
Enter Keto Cookie Dough Truffles.
I spied these simple silicone ice trays last time I was at IKEA, and I knew they would be perfect to make these.
They're super simple to make:
3 T Butter (preferably Grass-Fed)
3 oz Cream Cheese
4 T. Lakanto Golden Sweetener
3 Scoops MCT Oil Powder
1 tsp Vanilla Extract
3 T Almond Butter
1/4 cup + 1 cup Lily's Chocolate Chips
1/4 cup Coconut Oil
Directions:
Combine the butter, cream cheese, sweetener, MCT Oil Powder, Vanilla, Almond Butter, and 1/4 cup Lily's Chocolate chips until well combined.
Roll out the cookie dough between two sheets of parchment paper until the thickness is slightly less than the depth of your molds/ice cube trays.
Cool the cookie dough in the refrigerator 2 hours, or until firm to the touch.
In a bowl, melt the coconut oil and 1 cup of Lily's Chocolate chips a 30-second intervals until melted.
Place 1 T of the chocolate in the bottom of each mold.
Remove the cookie dough from the fridge and cut into squares slightly smaller than the molds. Place each square into the mold, pushing them down into the chocolate, then top with a bit more melted chocolate if need be.
Refrigerate the truffles for 4 hours, or overnight, then pop out of the molds and enjoy!
