Keto Fruit Pizza
{Low Carb, Ketogenic, THM:S, Sugar Free, Grain Free, Gluten Free}
One my list for a long time has been Keto Fruit Pizza, a treat I remember from growing up, and a great dessert to bring to a potluck or family dinner!
But now that I've perfected my Keto Sugar Cookie Recipe, it translates nicely into Keto Fruit Pizza.
Here's what you'll need….
For The Sugar Cookie Crust:
8 oz Cream Cheese, softened (sub Kite Hill for DF)
½ cup Butter, softened (sub Ghee for DF)
½ cup Lakanto Powdered Sweetener
2 Eggs
1 tsp. Vanilla Extract
⅔ cup Coconut Flour
2 tsp. Baking Powder
½ tsp. Salt
Lakanto Confectioner’s Sweetener, optional, for sprinkling on top
For The Fruit Pizza:
1 recipe Keto Sugar Cookies
Strawberries
Raspberries
Blackberries
Halos
Blueberries
For Icing:
8oz Cream Cheese (sub Kite Hill for DF)
½ cup Lakanto Confectioner’s Sweetener
Directions:
- First, bake the sugar cookie crust. Preheat oven to 350 degrees. Line a round pizza pan with parchment paper and set aside.
- Beat cream cheese, butter, and powdered sweetener. Add in the eggs and vanilla and beat until fluffy.
- Add in the coconut flour, baking powder, and salt, stirring until just combined.
- Bake at 350 degrees for about 25 minutes until the edges just barely start to brown. Remove from the oven and set aside to cool completely.
- Mix up the frosting by combining the softened cream cheese and Lakanto Sweetener until light and fluffy.
- Spread over the cooled crust, then arrange the fruit on top as desired.
