Keto Lime Popsicles
{THM:S, Ketogenic, Low Carb, Sugar-Free, Dairy-Free}
I’m a big fan of the taste of lime during the summer months. It’s refreshing and slightly sweet without being cloying – and the color of limes are so beautiful.
My Keto Key Lime Popsicles don’t actually use real key limes (thought feel free to substitute fresh key lime juice if you have access to it! – I’m so jealous if you do!) but they do hit the sweet spot for keto macros.
You will need a popsicle mold to make these, and the number of popsicles the recipe makes will depend on how large you molds are.
I used these Silicone Popsicle molds because I love the size, shape, and the fact that they’re silicone.
It makes 10 individual 3-oz popsicles, which I find is a good size for adults and kids.
I also used wooden popsicle sticks (the silicone mold I linked to comes with 30 free wooden popsicle sticks, which means one less item I have to purchase (at least until those run out!)
I used macadamia nut milk and coconut milk in this recipe to make it Dairy-Free, but you could very easily substitute another nut milk for the macadamia nut milk:
And for the coconut milk, you could substitute:
- Coconut Cream
- Heavy Cream
- Half and Half
The substitutions are pretty much endless!
This recipe makes 10 servings in this popsicle mold, which comes out to, per serving:
84 Calories
8g Fat
2g Net Carbs (2g Total Carbs)
1g Protein
Rarely are my recipes dairy-free, but this one is, since we’re using coconut milk and macadamia nut milk. If you prefer to use dairy, feel free!
Ingredients:
2 cups full-fat Coconut Milk
2 cups Macadamia Nut Milk (unsweetened)
½ cup Lime Juice
½ tsp Vanilla Extract
Pinch of Sea Salt
⅓ cup Lakanto Confectioners Sweetener
3 drops green food coloring (optional, for coloring only)
Directions:
Place all ingredients in a blender and blend until color and sweetener are incorporated.
Pour into popsicle molds and place popsicle stick. I used these, and the mixture filled all 10 of the molds with no extra.
Freeze the popsicles 4 hours or overnight until frozen through. Enjoy!
