I've tried quite a few premade “keto marshmallows” but none are as good as my Homemade Keto Marshmallows Recipe. These simple to make treats are extremely easy, require only 4 ingredients, and are wonderfully fluffy and stretchy.

You know those things you miss on a Ketogenic or sugar free diet, that you can't quite find a replacement for?
Keto Marshmallows are mine.
I've tried several brands of “keto” prepackaged marshmallows, and they just didn't live up to the hype. Too sweet, a texture inconsistent with marshmallows, or sweeteners that sent me running to the bathrooms – yikes!
These Keto Marshmallows are wonderfully versatile. Enjoy them many different ways;
- On their own
- In hot chocolate
- On top of coffee
- In s'mores (after you've let them get a bit stale)

How To Make Keto Marshmallows
These are wonderfully simple to make!
Start by blooming your gelatin with a bit of water.
While that happens, you'll make a simple syrup of allulose and water.
Finally, you'll combine the bloomed gelatin and the simple syrup and beat for 15 minutes, until light and fluffy!
Spread the marshmallow fluff into a pan lined with parchment and sprinkled with keto confectioner's sweetener, let sit for 12-24 hours, then cube, coat in sweetener, and use as you desire.

Keto Marshmallows Recipe {Low Carb, Ketogenic, THM:S, Sugar Free, Grain Free}
I've tried quite a few premade "keto marshmallows" but none are as good as my Homemade Keto Marshmallows Recipe. These simple to make treats are extremely easy, require only 4 ingredients, and are wonderfully fluffy and stretchy.
Ingredients
- 1 Tbsp. Grass Fed Gelatin
- 1/2 cup cold water (divided)
- 1 cup Allulose
- Pinch of Salt
- Vanilla Extract
- Marshmallow Flavoring
- Lakanto Confectioner's Monkfruit Sweetener
Instructions
- Combine the gelatin and 1/4 cup cold water in a stand mixer and let sit while it blooms.
- In a large saucepan, combine the allulose, 1/4 cup of water and a pinch of salt and heat to 240 (candy soft ball) to make a simple syrup.
- Immediately remove the simple syrup from the stove and pour it into the stand mixer with the bloomed gelatin.
- Switch the mixer onto low and slowly raise the speed until the marshmallows are light and fluffy. (I set a timer for 15 minutes and walk away from it)
- Line a 9x9 pan with parchment paper and sprinkle with the lakanto sweetener while the marshmallows are mixing.
- When the 15 minutes are up, add in a bit of vanilla extract and marshmallow extract.
- Pour the marshmallow into the prepared pan, sprinkle with more of the confectioner' sweetener, and let set up overnight
