Egg Yolks
Vanilla Extract
Lakanto Powdered Monkfruit
Pumpkin Pie Spice
Sweetleaf Stevia
Pumpkin Puree
Almond Flour
Coconut Flour
Baking Powder
Pinch of Salt
Frosting Ingredients
Grass-Fed Butter
Cream Cheese
Pinch of salt
Powdered Monkfruit
Vanilla Extract
Almond Extract
Sweetleaf Stevia
Almond milk, if needed

Keto Pumpkin Bars
Great for a crowd, my Keto Pumpkin Bars are simple to make, tasty, and keep well in the refrigerator to be used for lunches later. Keto Pumpkin Bars are low carb, ketogenic, a THM:S, Sugar Free, Grain Free, and Gluten Free.
Ingredients
- 1/2 cup heavy cream
- 1 egg
- 2 egg yolks
- 1/2 tsp. Vanilla Extract
- 1/4 cup Lakanto Powdered Monkfruit
- 2 tsp. Pumpkin Pie Spice
- 1 dropper Sweetleaf Stevia
- 1/2 cup Pumpkin Puree
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1 tsp. Baking Powder
- Pinch of Salt
- For The Frosting:
- 1/2 cup Grass-Fed Butter
- 4 ounces Cream Cheese
- Pinch of salt
- 1/2 cup Powdered Monkfruit
- 2 tsp. Vanilla Extract
- 1 tsp. Almond Extract
- 1/2 dropper Sweetleaf Stevia
- 1-2 T. Almond milk, if needed
Instructions
Preheat the oven to 350. Grease a 9x9x Baking Dish with coconut oil cooking spray.
Start by whipping the heavy cream with the powdered Monkfruit and Sweetleaf Stevia until it thickens and doubles in size.
Fold in the remaining ingredients carefully, so as not to break the whipped cream.
Spread the pumpkin bar batter in the prepared pan and bake at 350 for 35-40 minutes.
To make the frosting: cream the butter and cream cheese together until smooth. Add in the powered monkfruit, sweetleaf stevia, salt, vanilla extract, and almond extract.
If frosting is too thick, add Almond milk, 2 tsp. at a time until it reaches the desired consistency.
Spread over the cooled pumpkin bars, slice into 9 squares, and enjoy1
