You could make just about ANYTHING Jalapeno Popper flavored, and I would eat it.
Well, not jelly beans.
But any protein or vegetable with jalapeno popper on it I'm in!
So Keto Jalapeno Popper Chicken is a natural extension of my love for all things jalapeno popper. And yep, there are about a billion recipes for jalapeno popper chicken casserole.
But ya'll – I am going for EASY here.
There is very little mixing, I use ingredients you already have, and this chicken bake is literally thrown together rather than mix or do anything special to.
So if you're looking for an easy Keto Jalapeno Popper Bake, read on.
How To Make Keto Jalapeno Popper Bake
First, you'll cut thawed chicken breasts in half thickness-wise so they bake evenly. Coat both sides with salt and pepper, and if you have the time, brown each side for 1 minute in a hot cast iron skillet.
Place the browned chicken in a baking dish, then mix together the remaining ingredients for the jalapeno popper topping.
Spread the jalapeno popper topping over the chicken breasts then bake until cooked through.
It's literally that simple – and it's delicious!

Avocado or Olive Oil, for browning the chicken
1/2 cup Sour Cream
8oz Cream Cheese
1/2 cup Good Quality Mayo {I used Primal Kitchen}
3/4 cup Shredded Cheddar Cheese
1/2 cup Pickled Jalapenos, diced
4 slices Bacon, cooked and diced

Keto Jalapeno Popper Chicken
Keto Jalapeno Popper Chicken is a low carb casserole that makes everyone happy! Juicy chicken breasts, melty and spicy cheese topping make for a delicious dinner one day and lunch the next.
Ingredients
- 2 lbs Boneless, Skinless Chicken Breasts {I used ButcherBox. Check out their current deal HERE}
- Salt & Pepper
- Avocado or Olive Oil, for browning the chicken
- 1/2 cup Sour Cream
- 8oz Cream Cheese
- 1/2 cup Good Quality Mayo {I used Primal Kitchen}
- 3/4 cup Shredded Cheddar Cheese
- 1/2 cup Pickled Jalapenos, diced
- 4 slices Bacon, cooked and diced
Instructions
- Preheat oven to 350. Grease a 9x13 baking dish {or slightly smaller} with coconut oil cooking spray.
- First, you'll cut thawed chicken breasts in half thickness-wise so they bake evenly. Coat both sides with salt and pepper, and if you have the time, brown each side for 1 minute in a hot cast iron skillet.
- Place the browned chicken in a baking dish, then mix together the remaining ingredients for the jalapeno popper topping.
- Spread the jalapeno popper topping over the chicken breasts then bake until cooked through, about 35 minutes, but make sure the chicken is cooked to 165. Enjoy!
