Fall is here, and with the cooler weather I've been cooking with as many fall flavors as I can.
As I write this, I have a big pot of Keto Beef Stew simmering on the stove, a Keto Pumpkin Roll in the oven, and I'm editing photos of my Keto Shaved Brussel Sprout Salad!
This salad is a fantastic make-ahead recipe, as it gets even better after it has sat overnight before serving.
Ingredients for Keto Shaved Brussel Sprout Salad
A few ingredients give this salad big flavor!
For The Dressing: white wine vinegar, salt, pepper, shallot, lemon juice, extra virgin olive oil, or avocado oil.
For the Salad: Shaved brussels sprouts, crumbled goat cheese, unsweetened dried cranberries, and walnuts.

How To Shave Brussels Sprouts
There are a few methods you can use to shave brussels sprouts for the salad:
By Hand: using a knife and cutting board, but off the ends of the sprouts, then slice at thin as you can. Fair warning, this takes quite a while and it hard on your hands.
Mandolin: Most people have a mandolin in their kitchen and it works really well for shaving brussels sprouts. Just be sure to watch your fingers so you don't cut them!
Food Processor: most food processors have a shredding blade that comes with them. This makes quick and easy work of shredding brussels sprouts.
How To Make Keto Shaved Brussel Sprout Salad
Whisk all the dressing ingredients together and set aside.
Shred raw brussels sprouts using your preferred method, then toss with the dressing. Let set for at least 30 minutes.
Add in the goat cheese, unsweetened dried cranberries, and walnuts, toss gently, and serve.

Ingredients
- 1 pound Brussels Sprouts, shredded
- 1/2 cup Dried Cranberries, unsweetened
- 1/2 cup Goat Cheese, crumbled
- 1/2 cup Walnuts
- For The Dressing:
- 1/4 cup Extra Virgin Olive Oil or Avocado Oil
- 1 T White Wine Vinegar
- 2 T Lemon Juice
- 1 small Shallot, chopped
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
Instructions
