{Ketogenic, THM:S, Low Carb, Sugar Free, Grain Free}

You know all those random bags of nuts and coconut you have hanging out in your pantry after you've been keto for a while?  This Low Carb Caramel Nut Snack Mix was made out of my desperation for both a snack and to use up some odds and ends – enjoy!

How To Make Low Carb Caramel Nut Snack Mix

First, you'll mix together the nuts you've chosen.

I used

  • Almonds
  • Walnuts
  • Coconut Chips
  • Shredded Coconut
  • Macadamia Nuts

Then, you'll prepare the caramel coating by mixing equal parts butter and sweetener (with erythritol).

I used Lakanto Monkfruit Baking Sweetener for the caramel, which gives it perfect browning and taste.   It has zero glycemic impact, sugar free, and free of carbs, which makes it perfect for baking.  This is my favorite sweetener because it has no aftertaste – truly delicious!

You'll cook the sweetener and butter over medium heat until it boils and and darkens in colors, then stir in vanilla and salt.

Then, mix it slowly into the nuts and let cool.

This recipe is SUPER easy and SUPER delicious.

Ingredients for Keto Caramel Nut Snack Mix

Nuts: 3-4 cups.  {Almonds, Walnuts, Macadamias, Coconut Shreds and Coconut Chips}
Butter
Lakanto Baking Sweetener
Vanilla
Sea Salt
