My favorite easy, low carb, desserts are Keto Lemon Sour Cream Pie, Blackberry Bliss Bars, and this Low Carb Key Lime Pie.
Desserts like these that can serve a crowd are always great, because even if we're not having company, my family eats a lot by themselves.
Key Lime Pie is an American classic, either made in bars or pie form, that is served with a buttery crust, a thick and tangy filling, and topped with whipped cream.
It's a beautiful dessert that is SO easy to to make low carb & ketogenic, just like my recipe does.

For The Crust:

How To Make Low Carb Key Lime Pie
Start by combining all crust ingredients, then pressing into the bottom and sides of a pie pan. Set aside.
In a large mixing bowl, whip cream cheese until smooth. Add in the heavy cream, lime juice, keto sweetener, and sprinkle in grass-fed gelatin. Whip until the filling has doubled in size and is smooth and creamy.
Spread filling into prepared crust, then put in the refrigerator to cool and set while you prepare the keto whipped cream.
In a separate large mixing bowl, whip heavy cream and keto confectioner's sweetener until it holds stiff peaks. Either pipe or spread onto prepared pie.
Top with cut limes, if desired. Serve after chilling for at least 1 hour.

Tips for Preparing Low Carb Key Lime Pie
Give the pie time to cool and set. Doing set makes the filling even thicker and gives the flavors time to develop.
Use a springform pan for an even more beautiful dessert.
Be sure your cream cheese is at room temperature before trying to whip it. Doing so will make the entire process easier.

It should freeze ok, but I have not tried this?

- 1/2 cup Coconut Flour

- 1/2 cup Butter
For The Filling:
- 2, 8oz blocks Cream Cheese
- 1 cup Heavy Cream
- 1/4 cup Lime Juice
