I know, it's after Christmas and New Year's, but I ran out of time to get this recipe for Low Carb Peppermint Bark written up, photographed, and published, so you're getting it now.
Normally, I'm not much of a fan of peppermint, but this (and a few other recipes) are exceptions to the rule.
Peppermint bark is one of those things you grab from the store for last-minute holiday gatherings – or just because it's delicious.
This feels like a non-recipe, so much so that I almost didn't share it.
BUT, in case you're not aware of all the wonderful keto options for making this recipe, I decided to hit publish even if it is really simple to make.

How To Make Low Carb Peppermint Bark
Making low carb peppermint bark is ridiculously simple, although it does require a bit of patience.
Use your microwave to melt the milk chocolate chips (specific directions in the recipe card below) and spread onto prepared parchement paper. Let cool until set.
Then, melt the white chocolate chips (and add peppermint extract, if necessary) and spread over the set milk chocolate.
Crush the sugar free candy canes and spread over the still melted white chocolate, then set aside to let everything set.
Break the set peppermint bark into pieces, store in an airtight container for up to 2 weeks.

Ingredients
- 7 oz Keto Peppermint White Chocolate Chips
- OR, 7 oz. Keto White Chocolate Chips + Peppermint Extract
- 7 oz Keto Milk Chocolate Chips
- 6-7 Sugar Free Candy Canes (minis)
Instructions
- Use your microwave to melt the milk chocolate chips for 30 seconds. Remove from the microwave and stir until all the chips are melted (trust me, they will smooth and melt) and spread onto prepared parchment paper. Let cool until set.
- Then, melt the white chocolate chips (and add peppermint extract, if necessary) and spread over the set milk chocolate.
- Crush the sugar free candy canes and spread over the still melted white chocolate, then set aside to let everything set.
- Break the set peppermint bark into pieces, store in an airtight container for up to 2 weeks.
