How To Make Keto No Bake Cheesecake
Start putting together the almond flour crust by locating your springform pan. Spray it with coconut oil, avocado oil, or olive oil cooking spray.
In a medium bowl, combine almond flour, sweetener, melted unsalted butter, vanilla and salt with a fork (Or use a food processor), then press into the bottom of the pan, leaving the sides bare. No need for parchment paper. Set in the freezer to firm up while you make the filling.
Then, make the cheesecake filling.
First, beat the heavy cream into stiff peaks in a large mixing bowl with either a hand mixer, or a stand mixer.
Then, in a second large bowl, beat together all the remaining ingredients until smooth.
Fold the whipped cream and the other filling ingredients together either by hand, or on low speed with a paddle attachment until combined. This take a bit of patience and scraping the edges of the bowl, but should not take more than a few minutes.
Remove the crust from the freezer, and spread the prepared filling into the crust. Cover with plastic wrap, then chill for at least 8 hours, or as long as 24 hours before serving.The cheesecake will thicken up during the chill time.
To serve, loosen the cheesecake from the edge of the springform pan by running a clean, sharp knife around the edge. Then, loosen the springform and remove to expose the edges. Cut into individual slices, and use use a pie server to serve each piece individually.

Can I Make The Cheesecake Ahead of Time?
To Make Ahead, simply prepare as normal up to 2 days in advance. But sure to cover tightly with plastic wrap, and do not cut until ready to serve.
Do I Need To Use Lakanto Sweeteners?
You can use whatever low carb sweetener you prefer that is suitable for the keto diet, but be careful of different sweetness levels. I have not tested this recipe with any sweeteners besides Lakanto and Allulose.
Do The Ingredients Need To Be At Room Temperature or Softened?
Using the correct ingredient temperatures in the instructions ensures that the filling will be smooth, with no lumps, creamy, and have the correct flavor. It also ensures that the cheesecake sets up correctly.
Do I Have To Let The Cheesecake Set Up for So Long?
