Among all Trim Healthy Mama Bloggers, Keto Bloggers, and so many other diet bloggers, I've always wondered something:
Who had the idea to melt mozzarella cheese and make it into super low carb dough?
It's a great idea, don't get me wrong, but the person who came up with must have been an absolute genius because I never in a million years would have thought of it.

Fast-forward to today, and if you do a search for #fathead or #fatheaddough on Instagram or Pinterest, you'll discover that Fathead dough (or Mozzarella Dough, as it's also called) is a staple in the Trim Healthy Mama, Ketogenic, and Low Carb Community because it's easy to make, mildly flavored, and can be manipulated into having a texture like many different types of breads.
Today, I'm going to show you how to make 5-ingredient Fathead Bagels, because you'll find that when eating low carb or THM:S, you miss bread.
5-Ingredient Fathead Bagel Recipe
Creating a low-carb bagel replacement has been on my list for weeks, and I've made I-don't-know-how-many batches of Fathead dough trying to get the consistency right and make it as easy to mix as possible.
But, after trying a recipe for Fathead Pizza Crust, I realized I could make a few subtle changes and turn that same dough into chewy, mild Keto Bagels.
The uses for this dough are endless, really. I have recipes coming for the aforementioned Fathead Pizza Crust, as well as others for Cinnamon Sugar Keto Pretzels, Pretzel Dogs, Fathead Danish and more!

Ingredients for Keto Fathead Bagels
Almond Flour
Baking Powder
Shredded Mozzarella
Cream Cheese
Eggs
Sesame Seeds, or garnish of choice

Fathead Bagels (Low Carb, Ketogenic, Grain Free, THM:S)

Ingredients
- 1 3/4 cups Almond Flour
- 1 T Baking Powder
- 2.5 cups Shredded Mozzarella
- 2 oz Cream Cheese
- 2 lg Eggs
- Sesame Seeds, or garnish of choice
Instructions
- Preheat oven to 400 and line a baking sheet with parchment paper.
- Mix the almond flour and baking powder in a bowl and set aside.
- Place the Mozzarella and cream cheese in a bowl and microwave for 2 minutes, stirring halfway through, until the cheese is completely melted.
- Add the almond flour mixture and eggs to the melted cheese and use your hands to combine all the ingredients until thoroughly mixed. The dough will be very sticky, but it's important to mix it quickly while still hot, and make sure it is very well combined.
- Divide the dough into 6 even parts, rolling each out into a rope, then molding each rope into the shape of a bagel.
- Top with sesame seeds, if desired, and bake at 400 for 10-14 minutes. Let them cool for a few minutes on the baking sheet and then remove and enjoy!

I wish I could post a picture… Mine do not look like these AT ALL!!!! I wish I knew what I was doing wrong. I cooked them for the recommended 10-14 minutes and when I took them out they were still uncooked. So I put them in for another 10 minutes and they’re borderline burnt on top and doughy in the middle.

What temperature did you cook them at? I have always baked mine at 400 for 15 minutes (17 if I made them bigger than normal) and they turned out perfectly done.

Made the Cinnamon Roll. It was good! Not quite the ooyey, gooey yumminess I was looking for, but the taste covered it.

Do you have a picture of the bagels on the cookie sheet before they go in the oven? The rope and shape of a bagel is a bit vague.

I do not. I divide the dough into 6 even chunks, then roll into about 1/2 thick ropes, and then make them into a circle.

What almond flour brand do you use to give such low carbs?

I use the Kirkland brand (I buy it on amazon https://amzn.to/2LlQSTj ) and it has 2 net carbs per 1/4 cup. I’ve found a lot of people use Bob’s Red Mill which has way more net carbs compared to other brands.

The Kirkland Almond Flour you uSe has 5g of carbs per 1/4 cup not 2g

Nope, it has 2 NET carbs, 5 total carbs.

So I just tried this recipe this morning and my bagels totally flattened out…any idea as to why that happened and how to fix it?

Is it really over 400 calories per bagel? Mine turned out great but I didn’t check the calorie count until after I’d eaten one.

I’ve come across the Fathead bread/Pizza crust recipes numerous times online but did just now make these bagels for the first time. I WILL be making them again! They looked fabulous (but I did use a “donut mold”) and tasted good. No they didn’t taste like Panera Bread bagels but I was happy to find they did not have that eggy taste I’ve experienced with other low carb bread recipes. Put a little cream cheese and Simply Fruit preserves on it …. and aahhh. Looking forward to trying the pizza crust

Thanks for the recipe! I made these this morning but was in a hurry and went with the directions at top that just called for 1 egg and noticed below it lists 2 eggs. Guessing it should have been 2 eggs instead of 1. I’ll try that next time. But they’re still delicious even with 1 egg! I may try chilling in fridge for little bit after shaping them next time and see if they’ll hold their shape better since a few of them were flat (and I used brand new baking powder).
