Nearly every holiday growing up, we would gather at my grandparent's house and have a meal together, potluck-style.
And there was certainly no shortage of food.
From appetizers and salads, sides, an entree, and so many desserts, those meals are some of my fondest memories.
One recipe that I always associate with Easter, though, is the 7-Layer Salad my mom would make. Now that I'm a mom too, I definitely understand the appeal: a 7-Layer Salad is easy to prepare, can be kept overnight in the refrigerator, and is a real crowd pleaser!
My Keto 7-Layer Salad is the best of both worlds: a classic made sugar-free, more keto-friendly, while keeping the same flavor that I remember from family dinners.
Here's what you'll need:
For The Salad:
1 small Head Lettuce, chopped
1 cup Celery
½ cup chopped Green Onions
2 cups frozen Green Peas
6 hard boiled Eggs, diced
1lb Bacon, cooked and crumbled
2 cups Cheddar Cheese, shredded
Dressing:
2 cups Mayonnaise
2 T Lakanto Classic Granulated Sweetener
¼ tsp Garlic Powder
1 tsp Seasoning Salt
Directions:
Mix the dressing until the sweetener is dissolved.
Then, in a 9×13 pan, layer the ingredients in this order:
- Lettuce
- Celery & Green Onion
- Frozen Peas
- Diced Hard Boiled Eggs
- Bacon
- Dressing
- Cheese
Cover tightly with plastic wrap and refrigerate overnight.
