Keto Caramel Apple Donuts

Keto Caramel Apple Donuts
It is ALMOST Halloween, and we finally have fall weather here in STL. Am I the only one jumping for joy?!?
While I'm trying to spend every moment I can outdoors before the arctic tundra descends on us, I did have to use naptime the other day to create these crazy awesome Keto Caramel Apple Donuts for you! I've been experimenting a lot with keto bread/muffin/etc recipes, as well as with Chayote squash as an apple alternative lately, so creating these seemed like a no-brainer.
Also, as I realized while searching my archives, I have NEVER published a donut recipe on Fit Mom Journey. HOW???
It's time, I think.
Dairy Free Caramel Apple Donuts
A couple of notes about preparation:
I used a silicone donut pan, sprayed with coconut oil cooking spray for these, which worked wonderfully. The donuts came out very easily, as the silicone pan releases super easily, and the finished product is sturdy enough to be removed without trouble.

Also, the Chayote Squash is a super important ingredient in this recipe. It gives the batter the texture of feel of dough with apple pieces in it, with way less carbs. I found Chayote squash at my local Walmart.
Chayote Squash skin can irritate some people's skin, so be sure to wear gloves while preparing it until you remove the skin, and don't touch you face! I personally don't have any trouble with it, but better safe than sorry!
If you don't have access to Chayote Squash, zucchini is going to be the closest alternative, although somewhat more watery.
To properly prep the zucchini, you'll need to cube it, place it in a colander in the sink, and sprinkle it with salt to get as much excess water out of it as possible.
Then stir it into the batter and cook like normal (without first steaming it).
Ingredients for Keto Caramel Apple Donuts
Lupin Flour
Oat Fiber
Almond Flour
Psyllium Husk
Ground Flax
Baking Powder
Celtic Sea Salt
Eggs
Kite Hill unsweetened yogurt {or greek yogurt if you use dairy}
Lakanto Classic Sweetener
Sweetleaf Stevia
1 Chayote Squash, prepared according to directions. (see notes above about alternatives)
Cinnamon
Apple Extract

Ingredients
- 1/2 cup Lupin Flour
- 1/4 cup Oat Fiber
- 1/2 cup Almond Flour
- 2 Tbsp. Ground Flax
- 2 Tbsp. Psyllium Husk
- 3 tsp. Baking Powder
- 1/4 tsp. Celtic Sea Salt
- 4 Eggs
- 1/2 cup Kite Hill unsweetened yogurt {or greek yogurt if you use dairy}
- 1/4 cup Lakanto Classic Sweetener
- 1 dropper Sweetleaf Stevia
- 1 Chayote Squash, prepared according to directions.
- 2 tsp. Cinnamon
- 2 tsp. Apple Extract
- Caramel Icing found HERE
Instructions
First, prepare the Chayote Squash: using gloves, quarter each squash and slice out the core. Place in boiling water for 20 minutes, until soft.
Remove from the boiling water and place in the refrigerator to cool while you mix up the muffins.
Preheat oven to 350. Grease a silicone donut pan with coconut oil cooking spray. Place the greased donut pan on a sheet pan, and in the preheating oven to warm the oil.
Combine all donut ingredients except the chayote squash until just combined.
Remove the chayote squash from the refrigerator, slice off the skin, and discard. Chop the squash into small pieces and stir them into the donut batter.
Place the finished donut dough into a pastry bag, and snip off the end. Remove the donut pan from the oven, and pipe dough around each hole in the donut pan.
Bake at 350 for 20-25 minutes, until the tops just start to crack and the donuts are cooked through. Remove and let cool for 5-10 minutes before removing from the pan, at which point you can mix up the caramel sauce and drizzle over the tops of the donuts.
