Keto Sugar Cookie Bars

Need a keto dessert recipe that is easy to make for a crowd? My Keto Sugar Cookie Bars are one of my go-to's for potlucks and picnics.
I've been holding off on making these. Well, publishing the full cookie bar recipe, because I was waiting on a Keto Sprinkle product to be available for purchase!
I have a recipe for Keto Sprinkles found HERE, but they are, admittedly rather time consuming to make.
But recently, Stoka came out with clean, Keto Sprinkles, that come in a can like regular sprinkles from a grocery store!
These sprinkles are delicious, affordable, and CLEAN. Even the dyes they used are clean, and not artificial.

Butter, softened
Allulose
Lakanto Granular Sweetener
Eggs
Vanilla Extract
Almond Flour
Coconut Flour
Baking Soda
Cream of Tartar

Cream Cheese, softened
Vanilla Extract
Almond Extract
Sweetleaf Stevia
Lakanto Powdered Monkfruit Sweetener
Heavy Cream

Ingredients
- For The Cookies:
- 1 cup Butter, softened
- 1 cup Allulose
- 1 cup Lakanto Granular Sweetener
- 2 eggs
- 1 tsp. Vanilla Extract
- 1 cup Almond Flour
- ½ cup Coconut Flour
- ½ tsp. Baking Soda
- ½ tsp Cream of Tartar
- Sugar Cookie Bar Icing:
- 1/2 cup Butter, softened
- 4 oz Cream Cheese, softened
- 1/2 tsp. Vanilla Extract
- 1/2 tsp. Almond Extract
- 1/2 dropper Sweetleaf Stevia
- 2 cups Lakanto Powdered Monkfruit Sweetener
- 2 Tbsp. Heavy Cream
- Stoka Sprinkles!
Instructions
Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
In a large bowl, cream together the butter, allulose, and lakanto sweetener until light and fluffy.
Add in the eggs, followed by the vanilla extract.
Dump the almond flour, coconut flour, baking soda, and cream of tartar on top of the wet ingredients, then mix together.
Place into a prepared 9x9 baking pan prepared with coconut oil cooking spray, then bake at 350 for 20-25 minutes until the top just starts to crack.
Cool completely before frosting.
To make the frosting: beat the butter and cream cheese in a mixer until fluffy. Add in the extracts, sweetleaf stevia, and monkfruit, beating until combined.
Add in the heavy cream and beat again until light and creamy. At this stage you can add food coloring if you would like.
Spread the frosting over the cooled sugar cookie bars, then top with sprinkles.
