Looking for an amazingly tasty and easy breakfast idea that is Keto Friendly, THM Friendly, and Low Carb?  Your whole family will love these Keto Ham Egg Cups, whether they’re keto or not!

This recipe is great for meal prep, because you can whip up a batch of 12 in just a few minutes, and they store in the fridge for up to a week.  (they even reheat well, too)

These Keto Ham Egg cups are made easily in a muffin tin, using slices of ham as the cupcake liners, making cleanup fast and easy.

Even better, you can change them up to use up whatever vegetables or breakfast meats you have in your refrigerator.  Feel free to switch it up and make fun combinations with whatever sounds good to you!

Some great veggies/meats to include in yours:

  • Bacon
  • Sausage
  • Gouda cheese
  • Chopped Green, red, or yellow pepper
  • Red Onions
  • Sliced Mushrooms

The macros for these Keto Cheese, Egg & Ham Cups are extremely Keto and low-carb friendly.  They are also a THM:S fuel. Here are the macros:

12 servings/recipe
65 calories
4g Fat
1 Net Carb (1 total carb)
7g Protein

I’ve left the serving size as one egg cup, but you could easily make your serving size 2, for 2 net carbs, and 14g of Protein.

Ingredients:

12 Slices Ham
6 Eggs
½ cup chopped Ham (about 4 oz)
¼ cup chopped Green Onions
½ cup Shredded Cheese
Salt & Pepper, to taste

Directions:

Preheat your oven to 400 degrees.

Place one slice of ham in each hole in your muffin tin – using the ham like a cupcake liner.

Mix together the eggs, chopped ham, green onion, cheese, salt, and pepper and beat well to combine.

Pour the egg mixture into the ham-lined muffin tin.  Each cup should be full.

Bake for 15-18 minutes, until eggs are cooked through and the edges of the ham starts to brown.

Store in an airtight container in the fridge for up to 1 week.
