Ingredients for Low Carb Carrot Cake Muffins
Whole Eggs
Low Carb Greek Yogurt (or Kite Hill Unsweetened Yogurt for Dairy Free)
Vanilla Extract
Lakanto Classic Sweetener (or low carb sweetener of your choice)
Large carrot, grated
Lupin Flour
Oat Fiber
Psyllium Husk
Almond Flour
Baking Powder
Salt

Nutmeg

Actually, yes! Bake in a standard loaf pan lined with parchment paper for 50-55 minutes, until a toothpick inserted in the center comes out clean. Let cool completely before removing from the pan.
How Do I Store Keto Muffins?
These can be stored at room temperature for one day, but after that need to be moved to the fridge.
Store in an airtight container in the refrigerator for up to 1 week.
To soften up out of the fridge, microwave for 10 seconds!
How Can I Grate The Carrots?
If you have a food processor, that will be the easiest way. I have this KitchenAid mixer attachment that shreds and slices things for me and I LOVE it. You can also shred them by hand with a tool like this. Some grocery stores even have packaged, pre-shredded carrots that you could use.
For the best texture, you want small, thin carrot shreds rather than large ones.
I don't have eggs. What can I use instead?
While I haven't tested these options, your best bet will be a flax egg or chia egg.
Do I have to use Lakanto Sweetener?
I like Lakanto because their monk fruit baking sweetener is absolutely fantastic. But now, you are welcome to try this recipe with any other sweetener that cooks and bakes like regular sugar. Allulose is my 2nd favorite sweetener – give it a try!

Ingredients
For The Muffins:
- 4 Large Eggs
- 1/2 cup Low-Carb Unsweetened Greek Yogurt (sub Kite Hill Yogurt for dairy free)
- 1/4 cup Lakanto Classic Sweetener
- 1 dropper Sweetleaf Stevia (or liquid stevia of choice)
- 1/2 cup Lupin Flour
- 1/4 cup Oat Fiber
- 1/4 cup Almond Flour
- 2 Tbsp. Psyllium Husk
- 3 tsp. Baking Powder
- 1/4 tsp. Celtic Sea Salt
- 2 tsp. Cinnamon
- 1 tsp. Nutmeg
- 1/4 tsp. Ground Cloves
- 1/4 tsp. Allspice
For The Frosting:
- 8 oz Cream Cheese
- 1/4 cup Lakanto Confectioner's Sweetener
Instructions
- Preheat oven to 350. Grease a muffin tin or prepare with muffin liners.
- In a large mixing bowl, mix the eggs, yogurt, vanilla extract, sweetener, and grated carrot.
- In a separate large bowl, mix together the almond flour, psyllium husk, baking powder, salt, cinnamon, nutmeg, cloves, and allspice.
- Add the dry ingredients to the wet ingredients using a stand mixer or hand mixer.
- Fill each hole in the muffin tin 2/3 of the way full, then tap to remove air bubbles. Bake for 20-25 minutes.
- Remove from the muffin tin once cool and let rest on a cooling rack while you frost them.
- You can use the frosting of your choice, but I recommend Keto Cream Cheese Frosting!
