Low Carb Sour Cream Cake with Cherries

A tender sour cream cake with light flavor, topped with sweet & tart cherries, my Low Carb Sour Cream Cake is the perfect addition to breakfast, or as dessert after dinner.
Low Carb Sour Cream Cake with Cherries
Pre-Ketogenic Living, Cherry season was ALWAYS my favorite.
Cherries would go on sale in the grocery stores, and I could come up with all sort of ways to use them.
Now that we're keeping things lower carb, we take it easier on the fruits like cherries, but I've found ways to incorporate them into our diet to enjoy the delicious flavor without using up my whole day's worth of carbs.
One of those ways is this Low Carb Sour Cream Cake with Cherries.
Sour cream cakes are ALWAYS a favorite, because of how versatile they are. You can play with the flavor to create a delicious coffee cake, or sweeten it up for a dessert cake.
Either way, the result is moist and delicious.
Ingredients for Low Carb Sour Cream Cake with Cherries
For The Crust:
Butter
Golden Lakanto Sweetener
Eggs
Vanilla Extract
Coconut Flour
Baking Powder
For The Filling:
Sour Cream
Eggs
Vanilla Extract
Powdered Lakanto Sweetener
Pitted Cherries
Directions:
Preheat your oven to 350.
Grease a springform pan, then place a round piece of parchment paper in the bottom, if desired. Set aside.
To Make The Crust: Cream the butter and 1/4 cup Golden Lakanto Sweetener together until fluffy. Beat in eggs, then vanilla.
In a separate bowl, mix together the coconut flour and baking powder. Add the dry ingredients to the wet ingredients and mix until combined.
Spread the batter into the bottom of the pan and set aside.
To Make The Filling: Whip the sour cream, eggs, vanilla, and Powdered sweetener until creamy. Pour over the crust. Drop the cherries evenly on top of the filling.
Bake for 35-40 minutes. The middle will look uncooked, but that's ok. It will set up as it cools. Enjoy!

- 1.5 tsp. Baking Powder
- For The Filling:
- 1 cup Sour Cream
- 3 eggs
- 1 tsp. Vanilla Extract
- 1/4 cup Powdered Lakanto Sweetener
- 1 cup Pitted Cherries
