The original jello pudding pops were a staple of many childhoods.
My mom had individual tupperware popsicle molds that we would fill with pudding pops and enjoy all summer – and they were ALWAYS in the freezer for a hot day.
This variation is chocolate (a classic, right?) but they can also be made in vanilla, strawberry, and banana.

Supplies Needed To Make Low Carb Pudding Pops
As always, having certain supplies on hand in the kitchen will make this recipe simpler, although many substitutions can be made for the exact items I used.

I try very hard to always publish keto diet recipes for you that don't require any special equipment.
However, these sugar free pudding pops do require a popsicle mold, and there are several types to choose from. Other than that, everything needed you probably already have.
Popsicle mold: There are 2 different types to choose from. A mold with individual, removable molds, and the type with individual molds that are not removable.
I prefer the removable mold type. This is the one I use on a daily basis. Pudding pops need to be warmed up for a few minutes before they will release from the treat mold, and having removable molds will make this easier.
If you choose one without removable molds, be aware you will need wooden sticks to act as the popsicle sticks, which may not be sold with the mold.

Sugar Free Chocolate Pudding Mix: I use this brand, because the ingredients are mostly clean, it's readily available on amazon, and because it's low in carbs.
Technically, the jello sugar-free pudding in the grocery store aisle is low carb, but I do not recommend it because it contains unhealthy artificial sweetener, fillers, another ingredients, and will actually spike your blood sugar as much as regular pudding mix.
Heavy Cream: gives the pudding pops a creamy texture.
Almond Milk: a low carb milk option. The fewer fillers and thickeners, the better. This is my almond milk of choice.
How To Make Chocolate Pudding Pops
The best part of these pudding pops are how simple they are to make.
Just whisk together the almond milk, keto pudding mix, and the heavy cream in a large bowl then pour into the popsicle molds.
Freeze at least 3 hours, or overnight, then enjoy!
Recipe Tips & Notes for Keto Fudge Pops
- Many different flavors of pudding will work for this recipe. I recommend the Delish brand of pudding for it's clean ingredients and low carbs. We love making strawberry and vanilla pudding pops for warm weather!
- Pudding pops may be hard to remove from the molds. Run a bit of warm water over the mold, or hold them in your hand for a minute for easy release.
- Depending upon the size of your molds, you might have some extra pudding left over – and that's never a bad things! Just grab a spoon and dig in!
- If you have trouble with lumpy pudding, use your blender to mix up the keto pudding pops the next time. They'll come out smooth, and will be easily pourable from the lip of the blender.

Yes, absolutely. Use whatever milk fits your macros, budget, and dietary needs. When I'm making these for my daughter, I actually use raw whole milk, because of the highly bioavailable nutrients within it. So switch up milks however you would like, just be aware that changing milks will change the g of net carbs each pop contains.
Can I Use Cocoa Powder Instead of Pudding Mix?
I have not tested a version of this recipe that uses cacao powder and sweetener, so I cannot say.
