And sure, they're delicious, but I've never been big on either.
But brownies?
Count me in!

Ingredients for Keto Turtle Brownies
For The Brownies:
Almond Flour
Oat Fiber
Coconut Flour
Baking Powder
Cocoa Powder
Lakanto Baking Sweetener (see substitutes below)

How To Make Keto Turtle Brownies
First, make the brownies.
Preheat oven to 325. Grease a 9×9 (or 8×8) pan and set aside.
Combine all brownie ingredients except the chocolate chips in a medium mixing bowl.
Stir in the chocolate chips, then spread into the prepared square pan.
Bake at 325 for 20 minutes, until until brownies are not quite set.
While the brownies bake, make the caramel:
Place butter and heavy cream in a microwave safe bowl and microwave until butter melts. Set aside and keep warm.
In a medium saucepan, combine Allulose, water, sea salt, molasses, and vanilla. Stir to combine, then heat over medium-high heat until the temperature reaches at least 350 degrees F, and the color just starts to change.
Stir the the warm cream and butter into the Allulose mixture you just heated. Mixture will bubble, but keep stirring and it will settle down.
Cook the entire mixture over medium-high heat until the color deepens into an amber caramel color, stirring constantly. Test for the consistency you desire by placing some caramel on a spoon in ice water. When the caramel cools in the ice water to the desired consistency, remove from the heat.
When the brownies have been baked for 20 minutes, poke holes in the brownies with the handle of a wooden spoon, then pour the still-warm caramel over them.
Top with chopped pecans, then finish in the 325 oven for 5 minutes.

Do I have to use Allulose for the caramel?
In this case, yes. Normally I would encourage you to use your favorite sweeter BUT, for the caramel to come out correctly, you're going to need to use allulose. It cooks and bakes like sugar, is not absorbed by the digestive tract, and tastes great!
How do I store Keto Turtle Brownies?
Store in an airtight container up to 1 week in the refrigerator. Freeze individual slices for up to 1 month.
How to serve refrigerated brownies?
I highly suggest microwaving a refrigerated brownie for 10 seconds before eating – so yummy!

- 1 tsp. Baking Powder
- 1/4 cup Cocoa Powder

- 1/2 cup Stevia Sweetened Chocolate Chips {see options below}
