Healthy Strawberry Shortcake – THM:S, Ketogenic, Grain-Free, Sugar-Free, Low Carb

Strawberries have always had a special place in my heart. As a child, I watched Strawberry Shortcake on TV and played with the doll.  I would pick them by the gallon from our garden, then eat as many as I could while they were fresh, freezing the rest to eat during the winter.

I'm always on the lookout for ways to use inexpensive cuts of meat in creative and delicious ways. These Trim Healthy Mama Slow cooker Carnitas fit the fill exactly. Pair them with healthy sides, and maybe a margarita for a yummy meals.

I’m always looking for flavorful ways to cook inexpensive cuts of meat in THM-friendly ways, and these Slow Cooker Pork Carnitas fit the bill perfectly. So tender and full of flavor, with tons of citrus and an almost-smoked texture, they are great for feeding large crowds, or for having leftovers of later in the week.

When I’m not gobbling down Vanilla Ice Cream, I usually turn my attention to something even better: Trim Healthy Mama Chocolate Ice Cream. There are endless ways to use a basic Chocolate or Vanilla Ice Cream – from adding toppings like Hot Fudge, Caramel Sauce, Peanut Butter, Berries, and more.  Or, you could use mix-ins like nuts, brownie pieces, chocolate chips (stevia – sweetened, of course) or even cookie pieces.

Not too long ago, I was at a friends house and we had a really unexpected treat (well, for winter anyway): Strawberry shortcake! It’s a classic for a reason.
