As I've been moving towards adding carbohydrates back in, I've been increasingly focused on making sure the carbs I add in are paleo and don't spike my blood sugar too much.
Cashew butter is one of those ingredients I've always thought would be great in desserts because of it's mild but slightly sweet taste.
It only took a couple of tries to get a really good version of this cookie – based off my original Keto Chocolate Chip Cookies Recipe.

Cookies with Almond and Coconut Flour
I use two main flours in most of my desserts, cookies especially: almond flour and coconut flour.
Almond Flour is very easy to find these days in most grocery stores and is very affordable. It provides most of the bulk and structure of the recipe.
I also use 2 Tablespoons of Coconut Flour – another common flour that is appearing in more and more grocery store shelves.
Both can also be found on Amazon.

You'll need your choice of chocolate chips.
I used Lily's Milk Chocolate Chips because they're delicious, can be found on Amazon, Thrive Market, and more local grocery stores every month.
Lily's Chocolate Chips are keto, paleo, and sugar free.

Substitutes for Keto:
The biggest substitute you'll need to make is the honey, as it's chock full of carbohydrates.
For that, I suggest substituting ChocZero Syrup, specifically their Maple Syrup
How To Make Cashew Butter Cookies
I try to keep things simple. Preheat your oven, the mix together the wet ingredients, add in the dry ingredients, and finish by stirring in the chocolate chips.
Scoop into 1-inch dough balls with a cookie scoop, then bake for 9-11 minutes. DO NOT bake them longer, They will look underdone but it's perfectly ok. The egg will be cooked, and after cooling they will be ready to eat.

Cashew Butter Chocolate Chip Cookies - think of a buttery, decadent cookies that is grain and gluten free, paleo, and delicious!
Ingredients
- 3/4 cup Almond Flour
- 2 T Coconut Flour
- 1 cup Cashew Butter
- Pinch of Salt
- 1 Egg
- 1 tsp. Baking Powder
- 1/2 cup Honey
- 10g Collagen
- 1 cup Lily's Chocolate Chips
Instructions
Preheat oven to 350.
Combine the Egg, Cashew Butter, and Honey in a large mixing bowl.
Stir in the Almond Flour, Coconut Flour, Salt, Baking Powder, and Collagen.
Stir in the chocolate Chips, then bake for 9-11 minutes. Take the cookies from the oven while they will look underdone and let them cool on the counter.
