Keto Chicken Enchilada Bake
{Low Carb, Ketogenic, THM:S}
Love your dinner with easy to make Keto Chicken Enchilada Bake! Inspired by some of the amazing enchiladas I've had a Mexican restaurants throughout the years, these are cheaper and easier – for the whole family!
Keto Chicken Enchilada Bake Ingredients
Low Carb Tortillas (my favorites can be found HERE)
2 cups cooked, shredded chicken. (Canned will work also)
2 cups shredded Monterey Jack Cheese
1/2 cup Onion. Diced
1, 4-oz can Green Chiles, drained
1 jar no sugar added Red Enchilada Sauce (my picks HERE)
Keto Chicken Enchilada Bake Recipe Notes:
Tortillas: we used the Mission Carb Balance Tortillas, which are readily available just about anywhere that sells tortillas. Other options include Mama Lupe's, Cut Da Carb, Joseph's Lavash, other choices found HERE or even Homemade Tortillas.
Chicken: I like to cook my chicken in the InstantPot, then shred in my KitchenAid Mixer, but you definitely don't NEED to do that. You can buy pre-shredded chicken at most grocery stores or even pick up and drain canned chicken. Any of those options will work quite well!
Enchilada Sauce: While Siete is hands-down my favorite Mexican cuisine manufacturere, they unfortunately don't offer a red enchilada sauce. (Their green is fantastic, though!). Regular store brand red enchilada sauce is usually not to bad with regard to macros or ingredients, but for a “cleaner” sauce, pick up this Simply Organic Red Enchilada Sauce OR the Saucy Lips Enchilada Sauce.

How To Make the Keto Chicken Enchilada Bake
Preheat your oven to 350 degrees, and spray and 9×13 baking dish with non-stick cooking spray (Bonus points if it's Coconut Oil Cooking Spray!)
In a large bowl, combine the cooked, shredded chicken with 1 cup of the cheese, all of the onion, green chiles, and 1/2 of the jar red enchilada sauce. Mix to combine well.
Into each tortilla, add approximately 1/3 cup of the chicken mixture (but seriously, don't measure. Just eyeball this filling part)
Roll up and place in the prepared pan, repeating until all 10 tortillas are stuffed, and the baking dish is full.
Pour the remaining enchilada sauce over the enchiladas, followed by the remaining 1 cup of cheese.
Bake for 15-20 minutes, until cheese is melted and enchiladas are warmed through.
