Keto Spinach Salad with Strawberries, Feta & Pecans

Have you ever been in such a hurry and just wanting a quick dinner that packs a punch of summer flavors?
This Keto Spinach salad is all of these things, it can be whipped up in under 5 minutes, and it’s even Keto!
It’s one of my favorite salads because it packs a punch of flavor, protein, and healthy fats!
Of course, I'm not at all into plain salads, so in addition to spinach and Vinaigrette, I've added strawberries, onions, pecans, feta cheese, and grilled chicken.
This recipe uses one of my favorite dressings ever: Low Carb Balsamic Vinaigrette.
The dressing only adds to the flavor of the salad and is also super easy to put together.

A couple of tips for this recipe:
Mix up the dressing first, so that sweetener has time to dissolve in the oil and vinegar. No one wants crunchy dressing!
Also, you can totally adjust the strawberries to your liking. Personally, I would rather have more strawberries and 3 more net carbs because of them, than scrimp on those beautiful berries.
Where I will scrimp, through, is on the onions. Red onions look and taste beautiful in this salad, but cut them very thin and it’s always better to put in too few onions than too many (both for carb count and taste!)
6 oz. Baby Spinach
1 cup Strawberries, sliced
1/4 cup chopped Pecans
8 oz. Feta Cheese
1/4 cup Red Onion, sliced thin
16 oz Grilled Chicken, in strips
1 recipe Low Carb Balsamic Vinaigrette
Directions:
First, make the salad dressing: Mix all the ingredients in a salad dressing shaker and shake well. Let sit for 5 minutes or so, then shake vigorously again, making sure the Golden Lakanto is dissolved.
In a large bowl, combine the spinach, strawberries, pecans, feta cheese, red onion, and grilled chicken.
Drizzle the salad dressing over the salad, and toss well to combine.
Serve cold & enjoy!

I have been making a LC spinach/strawberry salad with poppy seed dressing but this looks like a nice change. I think that I will double the spinach and use the same amount of strawberries to cut the carb count. It’s almost pecan time in TX and so another good idea! I like the idea of onions as it will give it a nice punch. Thanks so much!
