These easy Keto Thai Chicken Lettuce Wraps feature a spicy peanut sauce, crunchy cucumbers, and seasoned chicken all wrapped in crispy lettuce! Feel free to swap out the lettuce for store-bought low carb wraps if you wish.
Keto Thai Chicken Lettuce Wraps
Ok, so Jimmy John's came out with a Thai Chicken Wrap – which I got as an unwich – that is DELICIOUS.
I grabbed one on a roadtrip the other day, and while it wasn't a perfect keto choice, it was good enough.
And it made me determined to copycat it at home!
Luckily, thai peanut sauce isn't too difficult to wing, adjusting to my particular taste/preferences.
Throw it in a lettuce wrap (or low-carb tortilla) with cucumber, carrot slaw and chicken for a delicious, fresh thai chicken wrap!
Ingredients for Keto Thai Chicken Lettuce Wraps
For Thai Peanut Sauce
Peanut Butter (no sugar added)
Thai Red Curry Paste
Granulated Sweetener of Choice (my favorite is Lakanto)
Garlic, mashed
Lime Juice
Apple Cider Vinegar
Sea Salt
Crushed Red Pepper Flakes
Water, to thin
For The Wraps:
Butter Lettuce (or lettuce leaves of choice)
Grilled Chicken
Raw Carrot Slaw
Sliced Cucumbers

Start by mixing together all the thai peanut sauce ingredients, adding in water as needed to thin.
Then, assemble your lettuce wraps:

- 1/4 cup Peanut Butter (no sugar added)
- 2 Tbsp. Thai Red Curry Paste
- 2 Tbsp. Granulated Sweetener of Choice (my favorite is Lakanto)
- 1 clove garlic, mashed
- 2 Tbsp. Lime Juice
- 1 Tbsp. Apple Cider Vinegar
- 1/2 tsp. Sea Salt
- 1/4 tsp. Crushed Red Pepper Flakes
- 1/4-1/2 cup Water, to thin
- For The Wraps:
