A one-skillet dinner, Keto Sun Dried Tomato Chicken is an italian inspired dish! Pan-fried boneless, skinless, chicken breasts are finished in a creamy spinach, parmesan, and sun dried sauce.
Keto Sun Dried Tomato Chicken
Sun Dried tomatoes are always a hit at our dinner table – especially when I don't tell the family that I've used them. Add in some heavy cream, parmesan, and spinach and you've got a sauce that goes with ANYTHING.
Currently, I'm obsessed with Kaizen pasta to go with this dish as well. Made only with ingredients my touchy digestive system can handle:
- Lupin Flour
- Fava Bean Protein
- Tapioca Starch
- Xanthan Gum

- Olive Oil/Avocado Oil
- Boneless, Skinless, Chicken Breasts
- Garlic Powder
- Salt & Pepper
- Chicken Broth
- Heavy Cream
- Sun Dried Tomatoes
- Parmesan
- Spinach
- Kaizen Pasta, if desired

How To Make Keto Sun Dried Tomato Chicken
Heat a large skillet over medium-high heat with a few tablespoons of avocado or olive oil in it.
Start by trimming your chicken breasts of any access fat or tendon pieces. Slice in half thickness-wise, and season with salt and pepper.
Pan fry the chicken breasts 2-3 minutes on each side, until golden brown on the outside, but not cooked through. Remove from the pan and set aside.
Deglaze your skillet using the chicken broth, then add in the sundried tomatoes, spinach, garlic powder, heavy cream, and parmesan. Stir, and allow to simmer for 5 minutes.
Finally, place the chicken breasts back into the skillet, cover, and cook on medium for 5-10 minutes until an instant-read thermometer inserted to the thickest part of the chicken reads 165.
Serve with more veggies, over a low-carb pasta, or on it's own!
