Slow Cooker Tomato Basil Chicken
{Ketogenic, Low Carb, THM:S, Sugar Free, Grain Free}
This super lazy but delicious meal is one you can throw in the slow cooker and let it to all the heavy lifting. Browned chicken breasts in a creamy tomato sauce with basil and parmesan – delicious over many different vegetables for a keto-friendly dinner.

What is easier than a slow cooker meal?
The sauce is easily one of my favorite things – I can eat it over broccoli, zoodles, or even low carb pasta.
And it's so nice to put it together in the morning, and not have to lift a finger again all day to cook it!
Ingredients for Slow Cooker Tomato Basil Chicken
Chicken Breasts
Avocado Oil (optional, see directions)
Diced Tomatoes
Tomato Sauce
Garlic in Olive Oil
Salt
Pepper
Italian Seasoning
Basil
Heavy Cream
Xanthan or Guar Gum
Fresh Basil, for Garnish

How To Make Slow Cooker Tomato Basil Chicken
First, choose if you want to brown the chicken breasts. I like to do this because they stay “together” in the slow cooker instead of shredding. If this is you, first you'll brown the chicken breasts for 2-3 minutes on each side in a hot pan with avocado oil.
Then, transfer to the slow cooker.
If not browning your chicken breasts, you can add them directly to the slow cooker – and YES you can add frozen chicken breasts if need be, just allow more time to cook.
Follow the chicken breasts with the diced tomatoes, tomato sauce, garlic in olive oil, salt, pepper, italian seasoning, and basil.
Cook for 4-6 hours on low (longer if using frozen chicken breasts).
Just before serving, remove the chicken, stir in the heavy cream and thickener to finish the sauce and serve!

- 1 lbs. Chicken Breasts (I used ButcherBox)
- 1 Tbsp. Avocado Oil (optional, see directions)
- 14oz Diced Tomatoes
- 8oz Tomato Sauce
- 1 Tbsp. Garlic in Olive Oil
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 1 Tbsp. Italian Seasoning
- 1/2 Tbsp. Basil
- 1/2 cup Heavy Cream
- 1/4 tsp. Xanthan or Guar Gum
- Fresh Basil, for Garnish
