How To Make Keto Thumbprint Cookies
Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
In a mixing bowl, cream together cream cheese, butter, and granular sweetener. Once combined, add in eggs and vanilla extract.
With the beaters off, dump in the almond flour, coconut flour, baking powder, baking soda, and sea salt. Mix until combined.
Use a cookie scoop to place cookie dough on prepared pan, leaving 2″ between each cookie. Gently flatten the top of each cookie, then bake at 350 for 8 minutes.
Take out of the oven and put the thumprint in each cookie (be careful, cookies and pan are hot!), then fill each thumbprint with 1 tsp. of jam, and bake for 2 more minutes in the oven.
Remove from the oven and let cool completely before removing from the baking sheet.
