Low Carb Pulled BBQ Chicken Sandwiches
{Ketogenic, Low Carb, THM:S, Sugar Free}
When warm weather comes around, I start putting easy, refreshing meals in the rotation, including these Low Carb Pulled BBQ Chicken Sandwiches. Pulled chicken with keto barbecue sauce, and keto coleslaw on a low carb bun – these are easy to put together and great during hot weather.
Low Carb Pulled BBQ Chicken Sandwiches
Do you love set-it-and-forget-it meals? Because I do.
This sandwich is one of those.
The chicken can be put in the slow cooker ahead of time, then shredded and sauced. Or, you can use an InstantPot if you're in a bit of a time crunch.
The coleslaw can be mixed and refrigerated ahead of time as well, making for easy assembly at mealtime.
There are so many choices for ketogenic and low carb buns.
In these, I used the Costco Keto Friendly Hamburger Buns, but there are many other options to choose from:
- Aldi Keto Friendly Buns
- Low Carb Wraps (like Josephs' Lavash)
- Keto Dinner Rolls
- Lettuce wraps
- Or even Fathead Hamburger Buns
Each options has it pros and cons. Some are cheaper, others are expensive. Some are “clean”, others are “dirty,” and it's important to recognize that not all of the options are created equal.
However, while the Costco Keto Friendly Buns I used are definitely dirt keto and NOT grain free, they taste great and photograph beautifully.
Keto Coleslaw
Of course, no BBQ Chicken Sandwich would be complete without coleslaw.
My recipe is very simple, uses ingredients on hand, and holds up for DAYS in the refrigerator.

I am so thankful that companies have come through with many amazing new keto products, including many varieties of Keto BBQ Sauce.
However, just like the keto bun options, some have questionable ingredients, while other have great ingredients but do not taste very good.

How To Make Low Carb Barbecue Chicken Sandwiches
Make Chicken: If using a slow cooker, place chicken breasts inside, top with barbecue sauce, cover and cook on high for 3-4 hour until chicken shreds. If using an InstantPot, place 1 cup of water on the bottom, then put the trivet in over the water. Cook chicken breasts on high for 35 minutes, until they shred easily. Toss with barbecue sauce.
To make the keto Colelsaw: Combine the mayo, vinegar, sweetener, celery seed, salt and pepper in a large bowl. Pour in the shredded cabbage and mix well. Refrigerate 1 hour or until ready to serve.
Assemble Sandwiches and enjoy!

- 2 lbs Chicken Breasts
- 1 bottle Keto-Friendly BBQ Sauce
- Keto-Friendly Buns of Choice
- 3 cups Shredded Cabbage
