I don't think that I will ever get tired of baked and/or air fried vegetables. They're just so good! Between all of the varieties or vegetables that I can do this with, and all of the different spice and herb combinations, there's no getting bored.
Not to mention, you can literally throw a ton of them on a huge sheetpan and have veggies for an entire week – super simple meal prep!
Some of my favorites are Crispy Air Fryer Green Beans, Turnip Fries, and roasted brussels sprouts.
These Crispy Keto Avocado Fries, however, might just take the cake!
And they go great with my Keto Fry Sauce!
Here's what you'll need:
Ingredients for Crispy Keto Avocado Fries
Fresh Avocados
Crushed Pork Rinds
Heavy Cream
Eggs
Heavy Cream (or almond milk)
Salt
Pepper
Garlic powder
Onion powder

How to Make Crispy Keto Avocado Fries
Making these Avocado fries is pretty simple, but requires a bit of technique to make it fast and less messy.
First, you'll prepare your avocados by slicing them.
Then, put your crushed pork rinds (see note) in one shallow dish, the coconut flour in a 2nd shallow dish, and finally whisk together your eggs and heavy cream in a 3rd shallow dish.
Season each of you 3 dishes with salt, pepper, garlic powder, and onion powder, stirring to distribute evenly throughout.
Now, designate a “dry” hand and a “wet” hand.
Use your wet hand to add a slice of avocado to your coconut flour. Use the dry hand to coat the slice in coconut flour, then transfer it (using the dry hand still) to the egg and heavy cream mixture.
Now using your wet hand, coat the avocado slice in the egg wash, then transfer to the crushed pork rinds.
Finally, use your dry hand again to coat with crushed pork rinds, and then place the slice in your air fryer basket.
Repeat until all the avocado slices are prepared, then air fry according to the directions below.
Notes:
To Make Crushed Pork Rinds: my favorite method is to fill my vitamix blender up with pork rinds (to the top) and set it on low. In about 30 seconds they're all crushed to perfections. You could also place the pork rinds in a plastic bag and crush with a rolling pin.

- 1 cup crushed Pork Rinds
- 1/2 cup Coconut Flour
- 2 Eggs
- 1/4 cup Heavy Cream (or almond milk)
- Salt
- Pepper
- Garlic powder
- Onion powder
Instructions
- First, you'll prepare your avocados by slicing them.
