Keto Chocolate Mint Brownies

Keto Chocolate Mint Brownies
Many keto “value added” recipes use a pre-made mix, which definitely makes things easier, but that is made more difficult by the fact that there are few keto brownie mixes exist.
And of those, most contain questionable ingredients that can not only upset your digestive system, they can even raise blood sugar and/or insulin in the bloodstream and harm your liver.
Some of the ingredients I try to avoid are:
- soluble corn fiber
- wheat gluten
- sucralose
- aspartame
- malitol
- palm oil
- palm shortening
- inulin
And that's just a few common ones! (As with everything, use your best judgment. Every person reacts differently to ingredients, and if you're trying to eat mostly whole, real foods, consuming questionable ingredients now and then will be less of a problem than if you're consuming them regularly.)

How To Make Keto Chocolate Mint Brownies
First, you'll prepare your brownies. Either use Lakanto Brownie Mix, or Almond Butter Brownies. Prepare according to their respective directions. Once baked, set them aside to cool.
Then, you'll prepare the mint frosting and smooth it over the cooled brownies.
Finally, after you've cooled the brownies with mint frosting in the refrigerator long enough to harden, you'll pour the keto chocolate fudge over the top to finish them off!
Ingredients for Keto Chocolate Mint Brownies
For The Brownies:
Lakanto Brownie Mix {or Keto Almond Butter Brownies}
Coconut Oil
Water
Eggs
For The Filling:
Lakanto Confectioner's Sweetener
Butter, softened
Mint Extract {Or, 4-5 drops Peppermint Essential Oil}
Green Food Coloring {natural food color alternative can be found here}
Water, as needed
For The Fudge Topping:
Lily's Milk or Dark Chocolate Chips
Heavy Cream
Lakanto Confectioner's Sweetener

Ingredients
- Lakanto Brownie Mix {or Keto Almond Butter Brownies}
- 1/2 cup Coconut Oil
- 2 tsp. Water
- 2 Eggs
- For The Filling:
- 1 cup Lakanto Confectioner's Sweetener
- 1/2 cup Butter, softened
- 3/4 tsp. Mint Extract {Or, 4-5 drops Peppermint Essential Oil}
- 2-3 drops Green Food Coloring {natural food color alternative can be found here}
- 1-2 T Water, as needed
- For The Fudge Topping:
- 1 cup Lily's Milk or Dark Chocolate Chips
- 1/2 cup Heavy Cream
- 1/4 cup Lakanto Confectioner's Sweetener
Instructions
Prepare the brownies according to their directions. Lakanto brownies mix directions can be found on the bag, Almond Butter Brownies can be found HERE.
While the brownies cool, prepare the mint filling.
Beat together the butter, confectioner's sweetener, mint extract, green food coloring, and water if needed.
Spread over cooled brownies, then chill in the refrigerator for 20 minutes before preparing the fudge topping.
To make the fudge topping:
Combine all ingredients in a microwave-safe bowl. Microwave for 1 minute. The chocolate chips will be mostly melted, so stir them until they finish melting and the Lakanto Confectioner's Sweetener is dissolved.
Pour over the chilled brownies with mint topping, then set in the refrigerator one hour or overnight.
Slice into 18 pieces {these brownies are RICH}.
