A Keto Salisbury Steak recipe – in meatball form – with mushroom gravy and ketogenic noodles. Very easy to make and reheats well for weekday lunches.
Keto Salisbury Steak
Ever since we stocked our freezer with a cow share, I have been having fun incorporating ground beef more frequently in our weekly menus.
During the summer, that was a bit more of a challenge, since my warm weather ground beef recipes are pretty much limited to tacos, taco bowls, and big mac salads.
No joke.
But with cooler weather comes some of my favorite comfort foods; meatballs, cheeseburger soup, meatloaf, chili, and Tater To Casserole.
One of the comfort foods I've been missing is Salisbury Steak.
I remember having Salisbury steak growing up – and embarrassingly, I loved it – but I wanted to recreate that childhood food in a cleaner manner but with all the classic tastes!
What is Keto Salisbury Steak?
Traditionally, Salisbury Steak is seasoned beef patties held together with egg and breadcrumbs, served with mushroom gravy over mashed potatoes.
I decided to shape this same ground beef into meatballs, and serve them with mushroom gravy, and over keto noodles.
How To Make Keto Salisbury Steak Meatballs
- Egg and Almond Flour will hold the meatballs together: these ingredients make the meatballs more tender and hold them together while cooking
- Cook the meatballs first, then deglaze the pan and use all the brown bits for the gravy. Cook the meatballs, then remove them from the pan. Add some beef broth and scrap the browned bits off the bottom of the pan – that's where all the flavor is! You'll cook the mushrooms in this pan too.
- We'll thicken the sauce with guar or xanthan gum, instead of flour. Traditionally, flour and butter would be browned together before adding the beef broth, and these would thicken the gravy, but we will use a low-carb thickener instead.
- Finish cooking the meatballs in the gravy. As the gravy comes together return the meatballs to the pan to simmer in the gravy until cooked through.
Paleo Variations for Keto Salisbury Steak Meatballs
For most ingredients the paleo substitution is an easy one:
and substitute mashed potatoes, mashed cauliflower, or another vegetable for the keto noodles.

Keto Salisbury Steak Meatballs

Ingredients
- For The Meatballs
- 2 lbs. Ground Beef
- 1/2 cup Almond Flour
- 2 Eggs
- 3 T Ketchup
- 1 T Dijon Mustard
- 1 tsp. Oregano
- 1 tsp. Salt
- 1/2 tsp. Pepper
- For The Gravy
- 2 tsp. Xanthan or Guar Gum
- 2 cups Beef Bone Broth
- 1 T Ketchup
- 1 T Worcestershire Sauce
- 1 tsp. Onion Powder
- 8 oz Sliced Mushrooms
- Salt & Pepper
- For Serving:
- Keto Noodles
- Mashed Cauliflower
Instructions
Heat a cast iron skillet with oil in the bottom.
While the pan heats, mix together all of the meatball ingredients. Use a 1-inch cookie scoop to portion into 1 oz meatballs, rolling to hold them together.
Cook the meatballs for 3 minutes on side. They do not need to be cooked through.
Remove the meatballs from the pan an deglaze with 1/4 cup of beef broth. Scrape any extra bits off the bottom of the pan.
Add the mushrooms to the pan and saute until soft.
Pour in the remaining beef broth, ketchup, worcestershire sauce, onion powder, salt and pepper.
Whisk to thoroughly combine, bring to a boil, then reduce the heat and let simmer for 5 minutes after adding the meatballs back to the pan.
Remove from the heat. The gravy will thicken while cooling. Serve over keto noodles, mashed cauliflower, or side of your choice.
