Keto Peanut Butter Eggs

A classic Easter egg candy made keto, these Reese's copycat Keto Peanut Butter Eggs are a wonderful low carb, high fat substitute that is easy to make and so, so satisfying.
Keto Peanut Butter Eggs
When you think of Easter candy, what comes to mind?
In my case, Peanut butter eggs are one of the many, many candies I think of.
Growing up, we had the most EPIC Easters. After church – sometimes a sunrise service with a breakfast of cinnamon rolls, bacon, eggs, sausage and more being served – we would had to my grandparents for an amazing lunch, followed by an Easter egg hunt filled with hundreds of Easter eggs!
Then, my grandparents would put together crazy awesome scavenger hunts all the cousins had to follow to find their Easter baskets which were stuffed to the brim with gold coins, robins eggs, mini candies, and of course Reese's Peanut Butter Eggs.
So you could say CANDY was really very important to my Easter memories.
This year in preparation for Easter, I've been churning out all sorts of recipes that I remember from my childhood.
I loved how these Keto Peanut Butter Eggs came together. They're incredibly simple and require only 4 ingredients – we will definitely be making these again!
What are Keto Peanut Butter Eggs
These are the classic combination of peanut butter and chocolate. Peanut butter powder and actual peanut butter form sort of a solid piece of peanut butter, which is cut into egg shapes, and then coated with chocolate. I also enjoy decorating these with icing and sprinkles, because that's just super fun!
Ingredients for Keto Peanut Butter Eggs
Natural Peanut Butter: of course we couldn't make keto peanut butter eggs without peanut butter!
Peanut Butter Powder: This helps to thicken the peanut butter and get the right consistency.
Keto Icing: I used Birchbenders Vanilla Icing (found at Walmart) to add sweetness to the keto peanut butter eggs. If you don't have access to this particular icing, or don't want keto peanut butter eggs that are as sweet as the traditional Reese's eggs, you can subsitute the same amount of natural peanut butter for the keto icing.
Keto Chocolate Chips: Used to coat the keto peanut butter eggs. I've given you several options for baking chips below!
Butter: helps achieve the correct chocolate consistency for dipping.

How To Make Keto Peanut Butter Eggs
This most amazing part about this recipe is just how simple it is to mix up! Here's what to do…
First, you'll mix together the peanut butter, keto icing, and peanut butter powder until it mixes into the correct consistency.
Then, roll out the peanut butter mixture between 2 sheets of parchment paper until it is about 1/2″ thick. Use your egg cookie cutter to cut out the egg shapes, which you'll place in the freezer for about 1 hour.
When you're ready to dip the eggs, place the keto baking chips and butter into a microwave safe bowl and microwave in 30 second intervals, stirring each 30 seconds. Be careful not to burn the chocolate! You should only need 2-3 30 second intervals to melt the chocolate.
Dip each egg in chocolate and set on parchment paper to set up. Once set up, you can decorate the eggs if desired, or leave plain like the Reese's candies are.

- 1/2 cup Natural Peanut Butter
- 1/2 cup Keto Icing (see what I used below)
- 1/2 cup Peanut Butter Powder (+1-2 T depending on consistency)
- 1 cup Keto Chocolate Chips (see options below)
- 1 Tbsp Butter
