Keto Pumpkin Waffles are the more moist cousin of regular old keto waffles, made especially for fall! They take only 1 bowl to make, and freeze well so you can make them in bulk and have on hand to throw in the toaster!

How To Make Keto Pumpkin Waffles
Preheat waffle iron.
Mix together wet ingredients (eggs, pumpkin, almond milk, coconut oil, vanilla).
Add in dry ingredients and mix until batter forms.
Pour the batter into the waffle iron, then close and let cook for 4-6 minutes (this time really depends on your waffle iron)

Keto Pumpkin Waffles are everything that's good about the colder season. Warm spices, a hint of sweetness, and the crispness you love in waffles.
Ingredients
- 3 Eggs
- 1/2 cup Pumpkin Puree
- 1/4 cup Almond Milk
- 2 Tbsp. Coconut Oil
- 1/3 cup Monkfruit Baking Sweetener
- 1 tsp. Vanilla Extract
- 1 3/4 cup Almond Flour
- 1/2 cup Vital Wheat Gluten or Oat Fiber (for gluten free)
- 1/2 tsp. Baking Soda
- 2 tsp. Baking Powder
- Pinch Salt
- 1 Tbsp. Pumpkin Pie Spice
Instructions
- Preheat waffle iron.
