Keto Scotcheroos
{High Protein, Low Carb, Ketogenic, THM:S, Sugar Free}
Keto Scotcheroos are a chewy no-bake peanut butter rice krispie bar with a butterscotch chocolate topping. My version is low carb, high protein, ketogenic, and a THM:S.
What are Scotcheroos?
I am hoping that most of you grew up with Scotcheroos at every potluck, backyard barbecue, and birthday party like I did. Because if you didn't, you were definitely missing out.
For me, scotcheroos have been a staple ever since I can remember.
Their base is a chewy peanut butter rice krispie, and they are topped with butterscotch and chocolate chips, melted together and spread over the top – at least in the traditional, high carb version.
How Are Keto Scotcheroos Different?
Keto Scotcheroos are a challenge.
The first hurdle was that no substitute for rice krispies existed that was low carb and ketogenic.
Luckily, High Key Snacks recently came out with a fantastic, high protein alternative to rice krispie cereal:
This cereal comes in 4 flavors:
- Vanilla
- Cinnamon
- Chocolate
- Fruity
Each of the macros are quite similar between the flavors. Per 1/2 cup serving:
- Calories: 90
- Fat: 5g
- Protein: 10g
- Net Carbohydrates: 0g (11 total – 3g Fiber – 6g Erythritol – 2g Allulose)

In addition, I used Lily's Chocolate Chips, No Sugar Peanut Butter, and Butterscotch flavoring to achieve a chocolate & butterscotch topping that does the original Scotcheroos justice.

How To Make Keto Scotcheroos
First you'll make the a Keto Corn Syrup alternative by boiling water, allulose, and butter extract. Add in the thickener of your choice, stir well, and set aside for 20 minutes to cool.
Then, to make the base, combine the cereal, first measure of peanut butter, and Keto Corn Syrup.
Press that into a bread pan lined with foil, plastic wrap, or greased well with coconut oil cooking spray. Refrigerate while you make the chocolate butterscotch topping.
For the final step, lightly warm the Lily's Chocolate Chips, and peanut butter in the microwave. Stir together and add the butterscotch extract, then smooth over the peanut butter cereal base.
Refrigerate until set, then cut and serve.
Keto Scotcheroos

Ingredients
- For The Keto Corn Syrup
- 3/4 cup Water
- 1 cup Allulose
- 1/2 tsp. Butter Extract
- 1/2 tsp. Vanilla Extract
- Pinch of Salt
- 1/2 tsp. Xanthan Gum
- For the Cereal Base
- 1 1/2 cups High Key Chocolate Cereal
- 1 1/2 cups High Key Vanilla Cereal
- 1/2 cup Creamy Peanut Butter {no sugar added}
- 1/2 cup Keto Corn Syrup
- For The Chocolate Butterscotch Topping
- 3/4 cup Lily's Milk Chocolate Chips
- 1/2 cup Creamy Peanut Butter {no sugar added}
- 2 tsp. Butterscotch Extract
Instructions
- First, make the Keto "Corn Syrup".
- Add the allulose and water to a saucepan over medium heat and bring to a boil, stirring constantly.
- Let simmer for 15 minutes until the quantity is reduced by half. Remove from the heat and whisk in the salt, xanthan gum, butter extract, and vanilla extract. Set aside to cool for 20 minutes.
- To make the base:
- Stir together the chocolate and vanilla cereals, 1/2 cup creamy peanut butter and 1/2 cup of Keto Corn Syrup.
- Press into the bottom of a bread pan lined with plastic wrap, foil, or sprayed with coconut oil cooking spray. Place in the refrigerator to cool.
- Place 1/2 cup peanut butter and lily's chocolate chips in a microwave safe bowl and heat for 30 seconds at time, stirring after each interval until smooth.
- Add in the butterscotch extract, then smooth over the cereal base.
- Place in the refrigerator to cool 1 hour, then cut into 10 pieces.

I purchased the vanilla cereal. Can I just use that?
Also, Lily’s now has Butterscotch chips and I bought some. How would I use those?
And, how is there 552 cal per bar and 10 bars???
The pan you used is a bread pan?
