Garlic Butter Steak Bites

I wholeheartedly believe in the power of quality meat to not only heal the body, but in the power or regeneratively farming that beef to heal our environment.

But back to our grocery bill: even with buying half a grass-fed cow that works out to $100/month spread out over the entire 12 months we eat off it, our grocery bill is still astronomical because we eat steak quite frequently.
Steak is quick to make if you like it medium rare like we do, and luckily we like less expensive cut of meat, such as sirloin.
Sometimes, though, that sirloin isn't tender even when it's just seared for 2-3 minutes on each side.
I've learned over time how to spot when the steak is going to be tough as I break it down from a Sirloin Tip Roast, and I have taken to saving the tougher cuts, cubing them, marinating, and making this Garlic Butter Steak Bites recipe because it's FANTASTIC.
Garlic Butter Steak Bites Recipe
Gather the following ingredients:
2 lbs. Steak (I like Sirloin, or any steaks from ButcherBox)
Salt
Pepper
Minced Garlic
Paprika
Worcestershire Sauce
Parsley
Butter

How To Make Garlic Butter Steak Bites
For these directions, I'm going to provide instructions to make the Garlic Butter Steak Bites in a cast iron skillet. These directions are easily adapted to a griddle or grill. Air Fryer and oven directions can be found in the comments of the recipe card.
Preheat your cast iron skillet over medium-higher heat with a a thin coat of oil.
Start by cubing your steak into approximate 1-inch cubes.
In a bowl, toss together the steak cubes with salt, pepper, minced garlic, and paprika until each piece is evenly coated.
In your preheated cast iron skillet, add the steak, turning each individual piece as it develops a sear on each side, about 2-3 minutes per side.
It may take more than 2-3 batches to cook all of the steak pieces.
Remove each batch from the heat and set aside as they are seared.
Add the butter, Worcestershire sauce and parsley, stirring constantly until it cooks down.
Pour over the garlic butter steak bites and toss to coat.
Serve warm or package up for later meals.
