Keto Butter Chicken
I am the only person in my house who likes Indian food.
Well, besides naan.
And who doesn't like naan.
But anyway, my family apparently doesn't like “exotic flavors' (their words, not mine), so besides wondering about what is actually wrong with them, I'm left with nothing else to do but make Indian food for myself and share it with you all.
Personally, I love ordering takeout butter chicken, but since moving there isn't a restaurant that serves it (well, at least) for miles and miles, so I had to come up with my own.
Unfortunately, most of the recipes on the internet don't taste like the takeout I'm used to, so I've been playing with the flavors for a bit, and eventually came up with this combo that tastes like how I think it should.
It's simple, takes only 30 minutes to make (and 2 pans), and makes leftovers for all week!
Keto Butter Chicken Ingredients
Chicken breasts, cubed
Whole Greek Yogurt, plain
Ginger Powder
Garlic in Oil
Garam Masala
Coriander
Cumin (more if you like a lot of spice)
Cayenne (more if you like it spicy)
Sea Salt
Turmeric
Ghee or Avocado Oil
Tomato Paste
Heavy Cream
Butter or Ghee
Allulose or Monkfruit
For Garnish: chopped cilanro and more greek yogurt

How To Make Keto Butter Chicken
In a large bowl, combine yogurt, ginger, garlic, garam masala, coriander, cumin, cayenne, and salt. Mix in the cubed chicken, then allow to sit and marinate for at least 1 hour, or overnight.
In a large pan over medium high heat, heat 1-2 tablespoons of ghee or avocado oil, and cook your chicken until each side is golden brown and cooked through. Set aside.
In a saucepan over medium high heat, heat the remaining 2 tablespoons of ghee or avocado oil. Add the tomato paste to the pan and cook for 3-4 minutes until the color starts to darken.
Immediately add in the tomato sauce, cream, butter, and sweetener. Whisk to combine.
Add the chicken to the pan, taste and adjust spice/salt if necessary, then spoon over rice, garnish with cilantro and more yogurt & enjoy!

30-Minute Keto Butter Chicken is bursting with flavor! Cooks in one pan, and goes well with cauliflower rice or other veggies.
Ingredients
- 2 pounds chicken breasts, cubed
- 1/2 cup Whole Greek Yogurt, plain
- 1 tsp. Ginger Powder
- 1 T Garlic in Oil
- 2 T Garam Masala
- 1 T Coriander
- 1 tsp. Cumin (more if you like a lot of spice)
- 1 tsp. Cayenne (more if you like it spicy)
- 3 tsp. Sea Salt
- 1/2 T Turmeric
- 1/4 cup Ghee or Avocado Oil
- 1/4 cup Tomato Paste
- 1 cup Heavy Cream
- 1/4 cup Butter or Ghee
- 1 T Allulose or Monkfruit
- For Garnish: chopped cilanro and more greek yogurt
