This recipe produces a tender, juicy, and thing chicken breast in a crispy coating perfect for many dishes!
I actually don't use any olive oil or avocado oil in this recipe, keeping fat low as well in case you're watching that macro.

Ingredients for Chicken Cutlets
4 Chicken Breasts – the best quality you can buy. I like to trim off any excess fat or tendons before tenderizing into thin cutlets. You'll use an instant-read thermometer to determine if the chicken is done.
Keto Seasoning Salt – my own recipe perfect for seasoning nearly ever cut of meat. Make it with ingredients you already have on hand, or pick up this paleo version that's good too and skip out on fillers or low-quality ingredients.
Italian Seasoning – a good, no-fillers Italian herb blend adds lots of flavor.
Pork Rinds – Plain pork rinds thrown in a blender (I use my Vitamix!) creates perfectly even pork rind crumbs that make a crispy, low carb coating when used in chicken cutlets. Pork rinds are wonderful for a low-carb diet.
Parmesan – the best quality grated parmesan you can find is a must in this recipe. It crisps up in the oven or air fryer right alongside the pork rinds and adds amazing flavor.
Eggs – I use large pasture raised eggs, but use whatever you have on hand!
Almond Milk or Heavy Cream – your choice. If watching your fat, use almond milk, whereas heavy cream sticks better to the chicken breasts.

Can I prepare the chicken cutlets ahead of time?
Yes, mostly. You can complete the entire recipe except baking, including coating the chicken up to 4 hours before serving. Then, bake fresh as that produces the best crunch.
How Do I Reheat the Keto Chicken Cutlets?
Refresh the crispy coating by cooking in the airfryer at 350-2-3 minutes, or in the oven at 350, on a pan that allows for air flow for 4-5 minutes. The crisp won't be exactly the same as fresh-cooked, but it will be close.
How Many Carbs per Chicken Cutlet?
If using the ingredients that are listed exactly, each chicken cutlet has just 2g net carbs. They're perfect for a keto or low carb diet. For Trim Healthy Mama, they are a THM:S.
What is the cooking time?
Bake these in the oven for 20-25 minutes, or in the air fryer for 6-7 minutes on both sides. Be sure that the internal temperature is 165 F before consuming.
How Do I Store Keto Chicken Cutlets?
Store in an airtight container in the refrigerator for up to 5 days. Refresh before serving using the above instructions.
Do I Have to Use Chicken Breasts?
Not at all! Chicken thighs will work as well.
How To Make Keto Chicken Cutlets in the Oven
Start by trimming each piece of chicken breasts and pounding out to uniform thickness of about 1/4 inch thick. Dry each chicken breast with a paper towel, season on both sides with seasoning salt and set aside.
Whisk together eggs and heavy cream or almond milk in a separate, low dish to make the egg wash.
Then, in another low dish combine pork rinds crumbles, parmesan cheese, and Italian seasoning. If you need to pulverize your pork rinds, do so in your food processor or blender – much easier than by hand!
Dredge each of the chicken pieces first in the egg mixture, followed by the dry mix and arrange in a single layer on prepared baking sheet that allows for air flow.
Continue coating the pieces of chicken until all are ready, then bake for 20-25 minutes, until an instant read thermometer inserted in the center reads 165 F. The cutlets will come out with a crispy crust, juicy, and golden brown, like thin chicken tenders or chicken strips.
How To Make Air Fryer Chicken Breasts
Follow the directions for oven baking through step 4, placing the coated chicken breasts in the air fryer basket.
Cook by air frying for 6-7 minutes at 400 F, flip then cook and additional 5-6 minutes at 400 F, until a meat thermometer inserted into the center reads 165 F.
Remove from the air fryer and enjoy your crispy chicken!
