Keto Peppermint Brownies
Part of working from home and homeschooling is learning to multitask. Between keeping kiddo on task, constantly cleaning the kitchen, working, and managing a whole entire house, sometimes I'm very “on it” with regard to recipe creation and other times, well, let's just say things get missed.
And in this case, it didn't go so well!
After making these Keto Peppermint Brownies, it took me 3 days to get them photographed!
Normally, I would make another batch, but I had precious little time to even do the bare minimum, and so I decided that the first batch would have to do!
It's like that sometimes, and I've learned that it's really more harmful than beneficial to be super perfectionistic about things like that.
All I do is stress and stress until I've worn myself out and that does NO ONE any good.

Ingredients for Keto Peppermint Brownies
Before I launch into an ingredients list, let's talk first about whether you're here looking for a FAST and EASY recipe, or if you're looking for a recipe you can control every ingredient in.
Because these can be made slightly Dirty Keto, or you can go the Clean Keto Route, depending on your preference.
For Dirty/Quick Keto:
scratch the brownie ingredients and instead pick up this Keto Brownie Mix from Lakanto. It's super easy, deliciously fudgey, and I love the ingredients.
Also grab some sugar free candy canes from the grocery store. Normally I don't like to use sugar free grocery store candies but in this case, we're literally only using a sprinkle of the crushed candy so I don't worry about it.
For Clean Keto:
Make the brownies as described and skip the crushed candy canes. They're not necessary for taste, only for decoration.
For The Brownies:
Lakanto Granluated Sweetener
Cocoa Powder
Almond Flour
Lupin Flour
Psyllium Husk
Baking Soda
Sea Salt
Pure Stevia Extract
Melted Butter
Eggs
Vanilla Extract
Mint Extract
Lily's Mint Chocolate Chips
For The Fudge Icing
Lily's Mint Chocolate Chips
Half & Half (or heavy cream)
Garnish {optional}
Sugar Free Candy Canes, crushed

How to make Keto Peppermint Brownies
Preheat oven to 350. Grease a 9×9 baking dish, or line with parchment paper. Set aside.
In a large mixing bowl, cream together softened butter and Lakanto Sweetener. Mix in the eggs, stevia, and vanilla extract.
Dump the cocoa powder, almond flour, lupin flour, psyllium husk, baking soda, and sea salt on top, then mix together until JUST combined.
Fold in the chocolate chips, then bake at 350 for 12 minutes – do NOT bake any longer than 12 minutes.
Take the brownies out of the oven and let them cool 15-20 minutes before slicing and removing from the pan. Brownies should only be slightly warm to the touch when you do this.

Ingredients
- 1 cup Lakanto Baking Sweetener
- 3/4 cup Cocoa Powder
- 3/4 cup Almond Flour
- 1/4 cup Lupin Flour
- 1/2 cup Psyllium Husk
- 1/2 tsp. Baking Soda
- 1/4 tsp. Sea Salt
- 1/4 tsp. Stevia Extract
- 8 T Melted Butter
- 2 Eggs
- 1 tsp Vanilla
- 1 tsp. Mint Extract
- 1 cup Mint Chocolate Chips
- For The Fudge Icing:
- 1 cup Mint Chocolate Chips
- 1/3 cup Half & Half
- Crushed Sugar Free Candy Canes for garnish (optional)
Instructions
