This easy Keto Peanut Butter Cup Fudge requires only a few readily available ingredients, about 5 minutes of work, and is perfect to keep on hand for a sweet treat!
Keto Peanut Butter Cup Fudge
I always think of fudge as a holiday treat, but since creating my original 3-Ingredient Keto Fudge I realized that keeping fudge on hand as a low-carb sweet treat was a very simple way to head off cravings before they got the best of me.
This fudge contains basic keto pantry staples and is very simple to make in the microwave.
Ingredients for Keto Peanut Butter Cup Fudge
Sugar Free Chocolate Chips (I like Lily's Milk Chocolate Chips. Other options HERE)
Heavy Cream
Lakanto Monkfruit Sweetener (Confectioner's or Baking varieties)
No-Sugar Peanut Butter
Sugar Free Peanut Butter Cups (I like THESE)

How To Make Keto Peanut Butter Cup Fudge
Combine the chocolate chips, heavy cream, sweetener, and peanut butter in a microwave safe bowl.
Microwave for 1 minute.
Stir well. You should notice that the chocolate chips are mostly melted, and should melt into a completely smooth mixture in under 1 minute of mixing. If they do not, microwave an additional 20-30 seconds (this doesn't take long!).
Using a scraper, turn out the fudge onto parchment paper in a 9×9 pan to cool.
Top with chopped peanut butter cups while still warm.
Leaving the fudge to cool on the counter will give it a softer texture. Leaving it to cool in the refrigerator will give it a harder texture.
Cut into 16 pieces and enjoy!
How To Store Keto Peanut Butter Fudge
Store in an airtight container in the refrigerator for up to 10 days.
To enjoy softer pieces, take out of the fridge for 10 minutes before eating.
