Keto Salted Caramel Ice Cream
{Keto Salted Caramel CHUNK Ice Cream}
Keto Salted Caramel Ice Cream is sugar-free sweet cream ice cream with honest-to-goodness keto chewy caramel chunks swirled within the ice cream. The ultimate indulgence that comes in at under 2 net carbohydrates per 1/2 cup serving.
Once upon a time, I made an ice cream that was so delicious I couldn't wait to blog the recipe – and it was completely by accident.
See, I've been working on creating a chewy caramel candy (keto, of course) for quite some time now. And although I haven't gotten it right yet, I WAS able to created Keto Salted Caramel Chunk Ice Cream out of it – a VERY happy accident!
To be honest, the salted caramel ice cream part wasn't difficult.
But making chewy caramel chunks that don't get rock hard after being frozen in ice cream WAS – and was the happy accident.
I may or may not have stood over the ice cream maker as it churned, scooping out little bits with a spoon. Then my daughter joined me, sitting on the counter with her own little spoon, and, well, probably only half of this ice cream actually made it to the freezer.
This ice cream is the stuff of my dreams.
First, let's talk about a couple of thing that you'll need to make this ice cream:
- An Ice Cream Maker: I absolutely LOVE this model as it easily sits on a countertop, is super easy to use, and is affordable. This one is the one I have.

- IMO Syrup: Basically high-fiber sweetener syrup that has 0 net carbs. Too much will throw you out of ketosis, but in the 1/2 cup amount that I have in this recipe you'll be just fine – and you'll love the taste of the caramel we make with it!
- Vegetable Glycerin: Absolutely essential to make the ice cream a bit softer when frozen. You can find my pick right here.
First, I made the Microwave Caramel so it could set before putting it in the ice cream. These caramels are different than the Keto Microwave Caramels I'm working on, because they need to be chewy when frozen. Stay tuned for a regular caramel candy recipe coming soon!
Ingredients For The Caramel Chips:
1/2 cup Keto Sweetened Condensed Milk
1/4 cup Lakanto Golden
1/4 cup Lakanto Classic
4 T Butter
1/2 cup IMO Syrup
Place all the ingredients in a microwave-safe bowl. Line a 9×13 pan with parchment paper.
Microwave for 6 minutes, stirring every minute.
Pour the caramel into the prepared pan, and let cool until firm, about 4 hours on the counter. I do not recommend refrigerating the caramels while cooling them. Then, break the caramel – it will be slightly soft and crumbly – into small pieces suitable for churning into ice cream.
Then, you'll make the actual ice cream:
2 cups Heavy Cream
1.5 cups Almond Milk
4 Egg Yolks
1/2 cup Lakanto Golden Sweetener
1 T Vegetable Glycerin
Combine all the ingredients in a large mixing bowl and whisk well until the sweetener is totally dissolved in the ice cream. You will NOT add the caramel at this point.
Pour the ice cream liquid into your ice cream maker and churn about 10 minutes. At this point, it will start to look sort of frozen, so slowly add in the caramel chunks.
Let churn another 10 minutes until the ice cream is the consistency of soft-serve. Stop the ice cream maker and scoop into your ice cream container. Freeze until firm.
Before enjoying, let the ice cream sit out on the counter for about 5 minutes to soften.
