These Keto Waffles are 2.9 net carbs each, 28 grams of protein, and are crispy and delicious! Even my 6 year old daughter was fooled by my Keto Waffles!
Crispy Keto Waffles
These waffles are not your typical eggy, dense keto waffles. Rather, they are a light and fluffy, crispy waffle that mimics the carb-laden classic.
They're great for meal prep too, freezing and reheating well.
Toppings for Keto Waffles
I like them with grass-fed butter and sugar free syrup.
Thankfully, sugar free syrups have come a long way in the past few years. Here are some of my favorites:

They are also great with toppings such as Keto Whipped Cream, strawberries, blueberries, raspberries, keto chocolate chips, or peanut butter!

How To Make Keto Waffles
Frankly, when it comes to foods like waffles, I'm looking for a convenience food, and therefore I made these in the blender.
Seriously, I put all the ingredients in the blender, blended it up, and pour it in the heated and greased waffle maker.
These keto waffles could not be simpler.
They will be soft when you pull them out of the waffle maker, but in under 30 seconds, they will firm up and be ready to eat!
Ingredients for Keto Waffles
Eggs
Neufchatel (or regular cream cheese)
Almond Flour
Oat Fiber
Collagen (I used this brand, but if you don't want to buy a huge box, this brand is also great)
Vanilla Extract
Baking Powder
Sweetener of Choice (I used Lakanto's Powdered Monkfruit)
OOO Flavors French Toast (Optional, but really makes these waffles!)

Keto Waffles

Ingredients
- 4 Eggs
- 4 oz. Neufchatel (or regular cream cheese)
- 1/4 cup Almond Flour
- 1/4 cup Oat Fiber
- 3 scoops Custom Collagen {30g}
- Splash Vanilla Extract
- 2 tsp. Baking Powder
- 2 Tbsp. Sweetener of Choice (I used Lakanto's Powdered Monkfruit)
- 3 droppers OOO Flavors French Toast (Optional, but really makes these waffles!)
Instructions
- Heat and grease your waffle iron.
- Place all ingredients in the blender, and blend until smooth.
- Pour in the waffle maker and cook until browned. Remove the waffles from the waffle maker and let sit for 30 seconds to firm up.
- Makes 3-4 waffles. Serve with your favorite toppings!
