Ingredients for Keto White Chicken Chili
2 lbs Boneless, Skinless Chicken breasts {I used ButcherBox chicken}
7 oz can Diced Green Chiles
8 oz. Neuchatel
1 Tbsp. Better Than Bullion {chicken} or 2 cube chicken buillion
1 Tbsp. Garlic Powder
1 tsp. Cumin
1/2 tsp. Paprika
1/2 tsp. Oregano
1/2 tsp. Coriander
1/4 tsp. Cayenne Pepper
Salt & Pepper, to taste

Ingredients
- 2 lbs Boneless, Skinless Chicken breasts {I used ButcherBox chicken}
- 7 oz can Diced Green Chiles
- 8 oz. Neuchatel
- 1 cup Shredded White Cheddar
- Tbsp. Better Than Buillion {chicken} or 2 cube chicken buillion
- 1 Tbsp. Garlic Powder
- 1 tsp. Cumin
- 1/2 tsp. Paprika
- 1/2 tsp. Oregano
- 1/2 tsp. Coriander
- 1/4 tsp. Cayenne Pepper
- Salt & Pepper, to taste
- 2 cups Water
Instructions
- InstantPot Instructions: Cube the thawed chicken breast and cook it on high manual for 10 minutes.
- Remove the grate from the bottom of the IP, shred the chicken, then add all additional ingredients beside shredded white cheddar.
- Do a quick release when the time is up, and stir in the shredded cheddar until creamy and melted.
- Serve with desired toppings.
- Slow cooker instructions: Cube the thawed chicken breast and it it with all other ingredients besides the shredded cheddar to a slow cooker.
- Cook on low for 8 hours, then stir in the cheddar and shred the chicken.
- Serve with desired toppings.
