Simple Low Carb Pasta Salad with italian flair! This was a staple at family potlucks growing up and a recipe I've come to love even more as an adult! It can serve as a full meal in itself, or a wonderful side dish.
Low Carb Pasta Salad Recipe
These last days of summer have been HOT and I've been very resistant to cooking much besides meats and vegetables on the grill (outside) and dishes that can be eaten cold – and that don't require me to turn on the oven.
This Low Carb Pasta Salad recipe is one of those dishes best eaten cold, and the only heat required is boiling the pasta.
Cubed ham and mozzarella make up the protein and some of the fat.
And Great Low Carb Noodles are a wonderful low carb and ketogenic substitute for pasta made from wheat.
Low Carb Pasta for Low Carb Pasta Salad
Until the last few months, there have been almost no low carb pasta options available.
The ones that were on the market weren't good enough to bother recommending to you – or eating myself, because I don't recommend anything I don't eat myself.
But towards the end of 2019 and the beginning of 2020 I've been trying some really fantastic low carb pastas.
My Favorite: Great Low Carb Pastas
Great Low Carb makes a huge assortment of low carb (and sometimes paleo) pastas, breads, and baked goods.
They all taste fantastic, and have great macros, but I do have to caution you that many contain wheat. If you're sensitive to gluten, these will not be for you.
But as far as taste and consistency, these pastas take the cake!
For my Keto Macaroni Salad, I used Great Low Carb Elbow noodles.

Second Favorite: Almond Love With
Made primarily from Almond Flour and classified as Paleo, Almond Love with Ziti is a high protein, low carb pasta.
The macros and ingredients fit perfectly with my goals, although cooking the pasta can be a bit tricky. Once you get the hang of it, this pasta tastes pretty good!

Ingredients for Low Carb Pasta Salad
Low Carb Noodles, cooked
Mozzarella Cheese (block cheese or fresh)
Chopped Ham
Olive Oil
White Vinegar
Italian Seasoning {primal palate makes a great paleo option)
Grated Parmesan
Shredded Parmesan
I kept this pasta salad very simple, using only ham, mozzarella, and low carb noodles marinated in italian dressing, olive oil, vinegar, and parmesan, because I usually prefer simpler meals.
However, you can absolutely go crazy with your favorite low carb ingredients:
- Olives
- Onions
- Tomatoes
- Pepperoncini
- Roasted Red Peppers
- Artichoke Hearts
My family tends to be crazy picky, so I've left them out, but if you like adding more ingredients, go for it!

Low Carb Pasta Salad Recipe

Ingredients
- 3 cups Low Carb Noodles, cooked
- 16 oz Mozzarella Cheese (block cheese or fresh)
- 16 oz Chopped Ham
- 1/2 cup Olive Oil
- 1/4 cup White Vinegar
- 4 T Italian Seasoning {Primal Palate makes a great paleo option)
- 1/2 cup Grated Parmesan
- 1/2 cup Shredded Parmesan
Instructions
- First, simply mix the olive oil, vinegar, italian seasoning, and parmesan cheese in a bowl.
- Chop the Mozzarella, and ham, then add to the parmesan mixture with the noodles and mix well.
- Let sit for a few minutes or overnight before serving so the flavors have time to be absorbed into the mozzarella, ham, and noodles.
- Of course, you can mix in any other low-carb ingredients you wish, from the list above!
