Keto Cinnamon Roll cookies are one of my favorite ways to repurpose keto sugar cookies into something cool! Roll up the dough with a buttery sweet cinnamon filling, bake, and drizzle with vanilla icing. The soft centers and slightly crisp outers mimic yeast cinnamon rolls – but without all the carbs and sugars!

How To Make Keto Cinnamon Roll Cookies
First, make the keto sugar cookies according to the instructions. This recipe has been on my site for years – they're tried, true, and delicious!
Then, after cooling the dough, shape it into a rough rectangle by rolling it out on almond flour.
Spread the filling onto the rectangle, and roll into a log.
Refrigerate the log to set it, then remove from the fridge and cut into cookies that are about 1/2″ thick.
Bake, then remove from the oven and drizzle with the icing.

Do I need to roll out the dough on almond flour?
Using almond flour is my preferred method, but a silpat or silicone mat could also work. Definitely try it first to make sure the dough doesn't stick, since keto doughs are very different from dough made from white flour. You can also roll the dough out on saran wrap, which works well and helps to roll the dough up.
Any tips for rolling?
Be patient, and don't panic if the dough cracks a little while rolling. Just smooth those sections out with your fingers before continuing to roll.
It is also helpful if you roll out the dough on the saran wrap you refrigerated the dough in. Then, you can use the plastic wrap to lift the dough and roll it a bit at time.
Also make sure to dust off any extra almond flour as you roll.
What sweetener can I use?
