{Low Carb, THM:S, Ketogenic, Sugar Free, Grain Free}
Like eating mint chocolate chip ice cream in cookie form, these Keto Mint Chocolate Chip Cookies in a warm, fresh-from-the-oven cookie! They're soft chocolate cookies, with sugar free mint chocolate chips, and drizzled with mint colored icing! Delicious and healthy!
Part of homeschool, I've decided is Home Economics – just like schools used to have.
For us, that includes chores (learning how to take care of the home you live in) and cooking (so you can feed yourself and/or your family)!
Obviously, core subjects are important too, but adding these things to our school schedule has really helped my sanity this year.
To get Jessica more invested in home economics, I've been letting her put together a list of things she wants to learn to make, or wants to make with me! We're interspersing her list in with my list of basics, and having a great time doing it.

Keto Mint Chocolate Chip Cookies
These cookies were all her request, after seeing someone on some youtube video make mint chocolate chip cookies. That's kind of how things work in our house…
But I was more than happy to oblige, and we made our own version of these cookies that are ketogenic, low carb, a THM:S, Sugar Free, and Grain Free!
And I have to say, I think they turned out wonderfully!
These are more of a cakey cookie, but they're super moist and hold onto that moisture even after a couple of weeks in the refrigerator – which is hard to come by in keto baked goods!
Ingredients for Keto Mint Chocolate Chip Cookies

These cookies are loosely based on my Keto Almond Butter Chocolate Chip Cookies, but I've made some changes to make them fluffier and hold their moisture!
For The Cookies:
Almond Butter (Cashew Butter or Tahini will also work, but you need a mild flavored butter, not peanut butter)
Eggs
Almond Milk
Lakanto Baking Sweetener
Salt
Coconut Flour
Cocoa Powder (unsweetened)
Baking Soda
Sugar Free Mint Chocolate Chips (I used these)
Mint Extract (optional, if you like lots of mint. I opted out)
For The Icing:
Lakanto Confectioner's Sweeter*
A few drops Mint extract
A few drops green food coloring
Water

Ingredients
- For The Cookies:
- 1 cup Almond Butter (Cashew Butter or Tahini will also work, but you need a mild flavored butter, not peanut butter)
- 2 Eggs
- 1/4 - 1/2 cup Almond Milk
- Salt
- 1/2 cup Coconut Flour
- 1/2 cup Cocoa Powder (unsweetened)
- 1/2 cup Lakanto Baking Sweetener
- 1/2 tsp Baking Soda
- 1/2 cup Sugar Free Mint Chocolate Chips (I used these)
- 1/2 tsp. Mint Extract (optional, if you like lots of mint. I opted out)
- For The Icing:
- 1 cup Lakanto Confectioner's Sweeter*
- A few drops Mint extract
- A few drops green food coloring
- 1-2 T Water
Instructions
- Preheat oven to 350. Line a cookie sheet with parchment.
- In large mixing bowl, cream together eggs and nut butter.
- Add in the Coconut Flour, Baking Soda salt, and Cocoa Powder. Batter will be quite stiff.
- Slowly mix in enough Almond Milk to make the batter a cookie consistency. Mix in mint chocolate chips.
- Scoop onto a cookie sheet lined with parchment, leaving room for the cookies to expand.
- Bake at 350 for 8-10 minutes. Cookies should still look underdone, but let them cool for 10-15 minute on the cookie sheet, before removing to finish cooling.
- To make icing: combine all ingredients in a bowl, then drizzle over the cooled cookies. Let set then serve.
