I've been baking keto cakes for the better part of 3 years now.
What started as a way to satisfy my sweet tooth without a blood sugar spike while on keto turned into a fascination with the challenge of baking with carbohydrates or sugar.
Baking the keto way is a challenge unlike anything else I've ever done, and I LOVE it.
There's just something so satisfying about turning out a delicious product without conventional ingredients that is just so satisfying!
Not to mention how gratifying it is to feed my family sweet treats that I know are better for them than those straight from the grocery store shelves.

Paleo Strawbery Cake? Keto? Paleo? Or Both?
I included Paleo in the title here because the ingredients, as long as you substitute ghee for butter, are completely paleo.
However, depending upon how you “do” paleo (or if you're Whole30) you'll have to decide for yourself if this cake fits.
Whole30 does not allow for “substitutes” of problem foods to be made, such as paleo pancakes, waffles, cakes, brownies, etc. The ingredients are allowed, but the execution is not.
However, many people who are paleo enjoy the occasional sweet treat without issue, and this Paleo Strawberry Cake fits the bill!
How To Make Keto Strawberry Cake
My Keto Strawberry Cake is virtually foolproof. There's no cream to whip that could fall.
Instead, you'll first mix the wet ingredients: eggs, butter (ghee for paleo), strawberry puree, and vanilla.
Beat in the sweetener (or coconut sugar if you prefer).
Then, add the dry ingredients.
Depending upon your “flours” (which brand, specifically), you'll may need to add a bit of almond milk to thin out the batter, but then you'll pour it into the prepared pan and bake!

Ground Flax (or Oat Fiber)
Baking Powder
Salt
Lakanto Baking Sweetener (sub Coconut Sugar for paleo, if you prefer) – see substitutes
Sweetleaf Stevia (optional)
Vanilla Extract
Eggs
Butter (sub ghee for paleo)

Substitutes for Paleo
Butter – Sub Ghee: Because ghee is essentially clarified butter, basically all of the lactose has been removed. Therefore, it is allowable on a paleo diet.
Icing: I've used a whipped cream of cream cheese icing on the keto strawberry cake, however this recipe for paleo buttercream is excellent if you're looking for a paleo icing substitute.

How To Store Keto Strawberry Cake
I store leftover Keto Strawberry Cake Covered, in the original pan in the refrigerator, for up to 1 week. The nature of the whipped cream frosting is that it will “melt” a bit over time.
If you choose to use cream cheese frosting, the cake will last up to 2 weeks in the refrigerator, the same time frame if you leave it unfrosted.

Ingredients
- 1 cup Almond Flour
- 1/3 cup Ground Flax or Oat Fiber
- 2 T Coconut Flour
- 1/2 T Baking Powder
- 4 oz Pureed Strawberries (fresh or frozen)
- 2/3 cup Lakanto Baking Sweetener (see substitutes below)
- 1/2 dropper Sweetleaf Stevia
- Pinch of Salt
- 2 Eggs
- 1/4 cup Butter, softened
- 1 tsp. Vanilla Extract
- For the Cool Whip Frosting
- 1 cup Heavy Cream
- 1/4 cup Lakanto Baking Sweetener
- 1/2 tsp. Cream of Tartar
Instructions
- Preheat oven to 350. Grease a 9x9 (or 8x8) pan and set aside.
- Combine the eggs, butter (or ghee), strawberry puree, sweetleaf stevia (if using) and vanilla extract in a large mixing bowl.
- Add in the sweetener.
- Add in the remaining ingredients, then bake at 350 for 25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to fully cool before frosting.
- To Make Cool Whip Frosting: whip the heavy cream, sweetener, and cream of tarter until soft peaks form. (for additional frosting options, see recipe notes)
- Frost the cooled cake and store up to 1 week in the refrigerator.
