Well, TikTok got me with the food videos.
I was scrolling and came across a recipe for a sugar pumpkin dump cake that looked absolutely amazing – and made me realize that I have some products in my pantry that would make a wonderful keto version of a pumpkin dump cake!
And since I'm writing this on the official first day of fall, I think it's completely appropriate.

One of the coolest things about the keto products market is that more and more mixes are being produced, making cakes like this one even easier and more accessible than ever.
But the other side of the keto-products-market-double-edged-sword is that as more and more products are released, we have to be careful to check ingredient lists for sketchy keto ingredients and fillers, not just look at the nutrition facts.

Monkfruit and Erythritol Blend
How To Make Keto Pumpkin Dump Cake
First, mix the pumpkin, almond milk, allulose, eggs and pumpkin pie spice. Pour into a greased baking dish (9×13 is best).
Pour the Lakanto Sugar Cookie Mix over the pumpkin mixture and DO NOT MIX. Simply smooth over the whole pan and pat down gently.
Top with chopped pecans, followed by melted butter all over (I used walnuts when I made this because that's what I was feeling, but most would probably prefer pecans)
Bake, then serve when cooled.

I used walnuts when I made this, because that's what I was feeling, and no you don't need to measure them. Go with you gut. Or use pecans, the more traditional accompaniment to pumpkin.
Some canned pumpkin can be a bit watery. If yours is, omit the almond milk. Libby's pumpkin and Aldi brand is usually the correct consistency, but I've had bad luck with off brand pumpkin, just so you know.

- 15 oz Canned Pumpkin
- 1/2 cup Almond Milk (omit if pumpkin is watery)
- 1 cup Lakanto Baking Sweetener {see sweetener subsitutions above}
- 4 Eggs
- 1 T Pumpkin Pie Spice
- 1 Lakanto Sugar Cookie Mix
- 1/2 cup Butter
- Chopped Pecans
- Optional, for serving:
- Keto Whipped Cream
- Basic Keto Vanilla Ice Cream

- Preheat oven to 350. Grease a 9x13 baking dish (or oval, like I used) and set aside.
- First, mix the pumpkin, almond milk, allulose, eggs and pumpkin pie spice. Pour into a greased baking dish (9x13 is best).
- Pour the Lakanto Sugar Cookie Mix over the pumpkin mixture and DO NOT MIX. Simply smooth over the whole pan and pat down gently.
